Souvlakia & Sheftalia

• Souvlakia, often referred to simply as "souvlaki," is a popular Greek dish consisting of small pieces of meat, and sometimes vegetables, grilled on a skewer. Here are some key points about souvlakia:

🥩 Meat Choices: Commonly made with pork, chicken, lamb, or beef. In some cases, seafood like shrimp can also be used.
🧂 Marinade: The meat is usually marinated in a mixture of olive oil, lemon juice, garlic, oregano, and other herbs and spices to enhance the flavour.
👨‍🍳 Cooking Method: The marinated meat is skewered and then grilled over an open flame until cooked through and slightly charred.
🍽️ Serving: Souvlaki can be served on the skewer, in a pita sandwich with vegetables and sauces, or on a plate with sides such as rice, salad, and potatoes.
🥗 Accompaniments: Commonly paired with tzatziki sauce, a yogurt-based sauce with cucumbers, garlic, and herbs.

• Sheftalia is a traditional Cypriot sausage that is quite different from typical sausages found in other cuisines.

Here are the main features of sheftalia:

📋 Ingredients: Made from minced pork or a combination of pork and lamb, mixed with finely chopped onions, parsley, salt, and pepper.
🥓 Caul Fat Wrapping: Unlike regular sausages, sheftalia is wrapped in caul fat (the thin, lace-like membrane that surrounds the internal organs of animals). This gives it a unique flavor and helps keep the sausage moist during cooking.
👨‍🍳 Preparation: The minced meat mixture is shaped into small, oblong patties or sausages, then wrapped in caul fat.
