In Estonia, there are many super talented chefs whose innovative ideas and respect for ingredients can serve as a great inspiration. One of them is Karl Mäe from the restaurant Kivi Paber Käärid.

Karl is convinced that the future of the Estonian food scene will continue to see an increase in quality. "People are becoming more demanding both in terms of food and service and they are putting their money where they can get it," he says.

But Estonia also boasts delicious classics that one should definitely try when visiting. Karl recommends guests taste such culinary masterpieces as spicy herring with butter on Muhu bread accompanied by a 7-minute egg. Also, Mulgipuder (a traditional Estonian dish made of potatoes and barley) with chanterelle sauce. "These are dishes and ingredients that, in my opinion, are genuinely good and work well together. I would rather suggest trying local produce: smoked flounder by the sea, locally pickled mushrooms or game jerky," he gives examples.
