What a joy it has been to do what we love most: connecting our friends visiting our land for the first time and making them feel like a part of it.

It’s been an incredible experience to take part in the project by .rosenthal, , and .

We brought our MIMO—our care and respect—for what truly matters: our producers. Let’s not forget that without them, we couldn’t do much at all.

Our chef , one of the souls behind , had the chance to guide our dear Phil through places that are deeply rooted in our Basque traditions.

Eskerrik Asko to Eneko from — we still remember the freshest mamia (curdled milk) we’ve ever tasted, and Phil’s one-of-a-kind experience witnessing the birth of a lamb as soon as he arrived at the baserri (farmhouse).

Eskerrik Asko to all our sukaldaris (chefs in Basque) for the unforgettable evening at the txoko (gastronomic society). Phil couldn’t stop enjoying the traditional dishes coming out of the kitchen — laughter, amazing food, and memories to last a lifetime.

For a long time, we have worked on countless recipe books and new ways to interpret and create, always striving for excellence in every technique. But without the foundation, we are nothing. In other words, without our products, we are nothing. And when we say nothing, we mean it—nothing.

Our products are the most important thing—the very essence. It is our responsibility to be humble and let them take center stage.

What makes us truly special is our deep respect for our producers. Remember… without them, there is little we can do!
