**𝗣𝗶𝗰𝗮 𝗣𝗶𝗰𝗮 𝗱𝗲 𝗦𝗲𝗽𝗶𝗮 𝗥𝗲𝗰𝗶𝗽𝗲**

**What is it?**

* A traditional Mallorcan dish typically served as a tapa or "variat" (a selection of small dishes)
* Can also be served as a main course with rice or mashed potatoes

**Ingredients:**

* 2 squids
* 200ml white wine
* 2 onions
* Crushed tomatoes
* Garlic
* Bay leaves
* Olive oil
* Salt
* Pepper
* Paprika

**How to make it:**

1. Clean and cut the squid into small pieces
2. Heat oil in a pan and cook the squid for 10 minutes
3. Reserve the squid and set aside
4. In the same pan, cook the onions and garlic until the onions are softened
5. Add crushed tomatoes and cook until the sauce has thickened
6. Add salt, pepper, paprika, and bay leaves, and stir well
7. Add the white wine and cook for a few more minutes
8. Combine the squid and sauce in a clay pot and cook for 30 minutes
9. Serve hot!

* A traditional Mallorcan dish made with bomba rice, meat, and vegetables
* Ingredients:
+ 300g arroz bomba
+ 2L chicken or beef broth or water
+ 250g pork ribs
+ 250g chicken
+ 250g rabbit
+ 2 chicken livers
+ 1 rabbit liver
+ 50g green beans
+ 50g green peas
+ 2 tomatoes
+ 1 onion
+ 3 cloves garlic
+ 20g sobrasada
+ 50g mushrooms
+ 20ml olive oil
+ Salt
+ 2 tsp mixed spices (cinnamon, cloves, nutmeg, and pepper)
* Preparation time: 25 minutes
* Cooking time: 25 minutes
* Total time: 50 minutes
* Servings: 2

**Instructions**

1. Heat olive oil in a clay pot over low heat.
2. Soak garlic and onion in the oil until softened.

5. Add pork ribs, chicken, and rabbit to the pot and cook until browned on all sides.
6. Add tomato, mushrooms, green beans, and peas to the pot.
7. Add mixed spices and stir well.
8. Add chicken or beef broth and bring to a boil.
9. Mince the livers and sobrasada with a little broth in the mortar and pestle.
10. Add the mixture to the pot and stir well.
11. Add rice to the pot and cook over low heat, stirring occasionally, for 15 minutes.
12. Serve hot, garnished with lemon, green pepper, and radishes.
