This is a busy time of year for the KokoMana team - with drier weather, we are trying to gather in all the cocoa we can... We're aiming to bring in at least 1000 pods a week - to assure a good, strong fermentation and re-stock our store with fine-flavoured beans. And that means 'all hands on deck' for de-podding!

We are excited to have enough beans (finally!) for a proper trial of the fermentation trays, that have been little more than a habitat for resting geckos, through these last couple of lean years. This technology has been developed for the small-but-innovative cocoa industry in Far-North Queensland. These trays give us nice, quick, uniform fermentation, reaching about 46C on the second or third day, without the cold, wet edges or corners that you tend to get in conventional fermentation bins. About 50kg of wet beans per tray - so a total of 200kg of beans for this stack. THANK YOU, Yan Diczbalis and the ACIAR Regional Cocoa project for bringing this excellent innovation into our chocolate-making lives!!!

Our processing shed is full to capacity - every drying tray full of freshly fermented beans (including some fermentation trays pressed into service for sun-drying), plus two more batches being fermented... and some bags of frech pods waiting for fermentation. Exciting times - and enjoying the timely sunshine! 🌞

Very excited to harvest the first of our sweet jackfruit. Most of the jackfruit here in Fiji are harvested green for jackfruit curry - which is indeed one of my lunchtime favourites. However, this variety is great for dessert - with icecream or made into a chocolate pudding - or just as a refreshing, healthy snack!

Part of the magic of shade-grown cocoa is you almost feel you are in a natural rainforest! Hard to imagine that back in 2013 this land was mostly bare slopes, with just a few trees and a thicket of invasive vine called Merremia. Now it’s a productive landscape with shade trees, cocoa, and many other useful trees and crops, and it's bursting with life - insects, birds and lizards! Come take a tour and see for yourself!
