Our 2024 tour season got off to a super start this week with our team of guides (all but one) present in the Aix en Provence market. The farmers’ stands were overflowing with the freshest Spring produce. We couldn’t take our eyes off the piles of green and white asparagus. And our guests all described the glossy red strawberries as the “juiciest and sweetest” they’d ever tasted “in their lives”. That’s Provence for you. Come join us! 🇫🇷

Here, you can see 3 types of cheese and you can identify them simply by their color. Yellow, off white and bright white. One of them is being served with local fig jam. Which one is this? And what type of milk is it made from? Hint: this animal’s favorite diet is “Herbes de Provence”, which grow on our hillsides and give a great flavor to the milk.

It’s rosé wine season! We are having a great time sharing delicious, emblematic wine made by our friends AIX Rosé during our gourmet walking tours.
Did you know the region of Provence is the worlds biggest producer of rosé wines? And it’s a drink with history, going back 2000 years ago to the Romans, who also drank rosé.
Since we believe “what grows together, goes together”, we like to pair it with foods from the region including goats cheese, olives, Ratatouille or a fresh salad. “Santé”, as they say here when clinking glasses.

From coffee to fromage, and asparagus in between…

We experienced a relaxed Sunday morning in Aix en Provence like locals do, starting with a café and people watching. This was in a historic venue, the haunt of writers and artists a century ago. Afterwards, a few steps down little alleys and along to the 700 year old market square, we arrived to a happy scene of shoppers and farmers, amid piles of Spring produce. One of our guests commented on the “Great Wall” of asparagus! At the end, we went to our cooking school to enjoy the treats collected along the way, all paired with a rosé wine tasting. Of course no gourmet walking tour would be complete without “fromage”; and we chose 4 different cheeses made with cows, sheeps and goats milk. A special surprise was truffle infused honey to taste with the cheeses. Delicious!

It is well known that in France there are more cheeses than days of the year. Our guests will just have to come back to try them all. “A bientôt “.

We’re so happy welcoming travelers again!

We’ve had a couple of honeymooners and others excited to come to France again, from across the Atlantic.

With Mathilde, they worked together to create a delicious Springtime lunch, using ingredients from the farmers market:

Starter of salmon tartar with avocado sorbet, followed by Mediterranean sea bream, garnished with homemade pasta, sauce “vierge” (olive oil, capers and fresh herbs) and asparagus harvested the day before.

Our apprentice chefs were thrilled and had lots of fun cooking together.

We welcomed back our first North American visitors today on a Tastes of Provence gourmet walking tour!!! The morning flew by, as we chatted about the history of ancient Aix en Provence (dating back 2000 years and formerly the capital city of the Kingdom of Provence). Wow! We also sampled traditional French pastries, drank coffees in a classic café, and grazed the farmers market, all topped off with a rosé wine tasting paired with young goats cheeses. What a treat for all!!!
