I had some off-piste lessons with Jamie Deamer last year. Out final goal was to ski the infamous Grand Couloir in Courchevel:

On the basis of “show the dog the rabbit” Jamie took me up the Saulire lift to look at the Grand Couloir. Then he explained the rather unusual approach along a ridge. That's apparently the hardest part. I watched a few people skittering along it. I didn't feel much like chasing a rabbit.

You know in the gym there's that machine that works your inner thighs? The one that only women use and gym staff tell you you don't need. They're wrong. I read somewhere that to be able to hold my skis together in powder I should be able to stand on a towel on a shiny floor and pull my legs together. I can't say for sure that it helped my off piste technique but it let me do the widest snow plough I've ever done. My skis were pretty much facing each other and standing on their edges. Even then I skittered all over the place.

The couloir has a large boulder in the middle of it and we chose the far side for our line. It was quite compacted and very hilly. Tight turns in not much space, reach over the top of the humps, swivel and extend. Everything I'd learned, all coming together. I stopped to breath at the bottom of the boulder. A guy just behind me fell and his skis went sliding past. They didn't stop. I don't know if I was feeling superior or petrified, but I was not going to fall. The second part was lovely. Big bumps. Tracks to follow and much softer than above. We stopped at the bottom and I had my photo taken. It really doesn't look very steep in the photo but still my best ride ever.
