It is a private home decorated artistically yet flamboyantly ,with an aristocratic style not remotely like a hotel or other such venue, genuinely wonderful and esoteric. It is in a village untouched by tourism, sleepy and beautiful. Surrounded by Cote de Rhone vineyards and forests this is a world away from the excess or glitz of the Cote d'Azur for the more discerning Francophile, looking for a

south of France long remembered and not often found. It is situated on the border of Provence and Languedoc with balmy temperatures and wonderful local produce for gourmandes ! Local wines include Chateauneuf des Papes, Gigondas, Lirac and Tavel- literally on the doorstep so lots of wine tasting and vineyard visits incorporated ! This is a property for the connoisseur , the aesthete ,the more discerning amongst us. It comes fully equipped with all modern amenities such as adorable bathrooms, high thread count Eygyptian bedding, fully functional chefs kitchen ( Lacanche 3 ovens ) and fabulously comfortable beds but also intriguing gardens , with old deliciously scented roses, plumbago, hortensia, and jasmine leading to the old Castellas, and surrounding a stone pool 6m x 15m with columns and statues.

Early evening magic ! That last lingering swim as the sun goes down reluctant to break the spell. Dinner reservation at one of the wonderful nearby restaurants or a plate of fromage , a bowl of sweetest cherries and an ice cold bottle of rose taken near the pool listening to the last cicadas as daylight falls and swallows swoop ?- just another perfect day

Sunday lunch on the north terrace with friends trying to all be in the shade as the sun moves round. We had soft goats cheese with coriander and ginger served with curcuma bread as a starter followed by pesto roasted chicken breasts on a salad of lettuce and blanched raspberry ripple borlotti beans tossed in garlic and doused in olive oil, a separate salad of green beans , confit of lemons and cashew nuts in a tahini dressing and another salad of heritage tomatoes with torn basil sea salt and drizzled in olive oil As the sun finally chased us from the table we took desert to the pool and sat on stone steps, feet in the water eating homemade lemon and polenta cake with peaches soaked in lemon gin Ruinous

Mathieu makes a friend. He’s a very sociable cat and happily wants to be included in everyone’s plans unlike little Merlin who squirrels away upstairs generally in an old vegetable basket with his Aran jumper blanket which has to be prised off him to wash occasionally. Both entirely different temperaments but both adorable. Merlin headbutts for tickles but runs from strangers whereas Mathieu adores attention and follows guests - even trying to get into their rooms ! Can’t imagine life without them. Hope you like cats !

I didn’t know 2 completely different roses could grow from the same stem.! Most are palest blush pink opening from copper coloured buds but today a wonderful deep crimson bud has opened with velvet copper inner petals but on the same rose bush. Isn’t nature amazing ?

First night went well ! A lovely group of Uk German Italian and USA meeting for the first time to share champagne dinner and stories. Mathieu introduced himself by cuddling everyone whilst Merlin little shy boy stayed happily snoozing in his basket in the kitchen. We had courgette and fennel gazpacho, slow cooked lamb with artichokes and white chocolate mousse , black olive caramel and strawberries. Not a bad start

Day one of our course A taste of Provence. We have 9 lovely people from USA ,Uk and France here for the next 3 nights showing them a little snippet of life here. After a champagne reception in the salon we feasted on courgette fennel and mint gazpacho followed by new seasons lamb with baby artichokes complemented by Chateau St Nabor special cuvée and rounded by a smooth white chocolate mousse with black olive caramel. Our vegetarian guests had spiced lentils on a bed of homemade hummus topped with Persian carrot jam. A good start I would say !

Oh the stories these old stones could tell. Built 1543 the Chateau has weathered numerous wars and hosted various births marriages and celebrations in its illustrious history. We have been custodians nearly ten years opening the doors to guests for six years welcoming discerning travellers. We have renovated , repointed replanted and decorated but the inherent charm is an intangible magic , a building of inimitable positive footprints and always an atmosphere of peace and tranquility. There is never a day we aren’t grateful for this opportunity to be a small part of the spell it weaves and no matter how tired at the end of each day it’s a big Thankyou to the universe for giving us this chance to live our dream and meet the wonderful people who cross our paths. Just how fantastic is that ?

So happy with the new colours in the grand salon. Artists Jan and Samuel weaved their magic with restoration of the mural and painting the walls in a soft wash of terracotta limestone whilst restored the tired old red velvet sofa with a beautiful faded linen and trimmings from and the silk checked fabric from pulls all the colours together. It’s a room flooded with light with huge windows both south and north facing and doors to the north terrace with fountain and little slippery fish - a huge temptation to two naughty well fed kitties who are convinced they need more …..

Due to a really late cancellation we have 2 places suddenly available on our A Taste of Provence course running Thursday 18 th April to Sunday 21st. The price is 1500 euros per person which includes 3 nights accommodation in private room with en-suite bathroom , all meals and drinks including champagne reception, visits to 2 markets foodie and antiques , a vineyard tour with tastings , truffle tastings , cookery class and a chance to swim in our beautiful heated magnesium pool. Taken at our first ever A Taste of Provence 6 years ago. We’ve tweaked things considerably since adding aprons, itinaries and menus and working out timings and learning what works so that everyone has plenty of time to enjoy the heated magnesium pool and just being at this wonderful place absorbing the beauty rather than cramming too much in ! We still manage to take everyone to the best market , a trip to Uzès tasting truffles , a cooking class , visit to the brocante market and a vineyard tour, meeting each other , sharing stories , food and wine , forging friendships which often result in repeat visits - serendipity! Due to a cancellation we have one place left in our May group 16-19 th , and several in our September 12-15 th. It’s all inclusive with transfers to and from Avignon , 3 nights accommodation and all meals and wines. We love life in this crazily gorgeous castle and want to share it ! What’s stopping you ? Spring has sprung ! We have had a week of nasty mistral, finally abated - wind which rattles windows, whipping errant tendrils of vines from their trellis and overturns stacked terracotta pots like nasty bully boys looking for mischief. Cats stay home snuggled in baskets and we sit at the kitchen table answering emails watching the sunshine gradually unfurling, filling our calendar as bookings come daily now. So happy with this sundrenched room ! The walls have been painted with lime wash pigments built in layers allowing the stone to breathe. New sofas from in a soft russet velvet have become a snuggle place for fluffy cat Mathieu whilst Merlin guards his basket cautiously in the kitchen We have the old big sofa being newly clad in a faded washed linen and then like Eliza Doolittle I shall never move till spring pops over the windowsill !

Having a gossip in the garden as massive pruning takes place. We are cutting olive trees , pruning roses within an inch of their lives and have planted 30 blue hyacinth bulbs in pots Green shoots and downy buds are appearing on white lilac and purple wisteria . Roses have rosy red striped shoots unfurling hopeful green apple leaves and the first flush of pale pink blossom on almond trees shyly flutters and flirts with weak sunshine Could spring be coming soon ?

Cottage 3 ( renamed by guests the Princess Suite ) or La Suite ? Both beautiful, big and luxurious for a very special romantic holiday. La Suite with canopied four poster bed by , has the advantage of a comfortable soft tweed sofa bed which can be for 2 smaller children if required has a separate enclosed softly lit stone terrace with table and chairs and is near the salon and kitchen being in the main Chateau whereas Cottage 3 has more privacy as it is set highest up in the garden and walking through white roses and lavender releases a cloud of perfume and little butterflies on the way to the pool below. Which one would you choose to make your dream come true ?

The master bedroom suite is only available to guests if the whole Chateau is rented. The bedroom is voluminous with high ceilings and oil ragged walls with murals of musicians in Renaissance costumes. The chandelier has 56 lights and hangs from a painted wooden ceiling on a faded blue velvet rope. We brought the enormous mirror from Paris convinced it would smash to smithereens in transit but anchored now to the wall as a bed head its here to stay. Double French doors open to a private terrace and in summer the heavy orange damask curtains billow gently in the night air as scents of jasmine and roses waft from the pergola. The theatrical bathroom worthy of Cleopatra has a large polished plaster walk in shower for those not wishing to wallow in the abject luxury of the sunken bath surrounded by mirrors . A private study and 2 dressing rooms complete the suite This is an immersion in history and art. and beauty beyond words. Come and see

Colour is such a mood changer. Our newly decorated salon is like an immersion in a warm bubble filled scented bath. It’s comforting soothing and guaranteed a happy glow of contentment. Rejecting calm neutrals and bored seeing endless grey the Chateau flamboyantly embraces colour and the changing intensity of light in Provence creates a magical harmony. Soft limewashed terracotta walls , russet velvet sofas and blue silk drapes contrast with butter cream silk Louis XIV chairs painted furniture and hand woven tapestry cushions - a symphony of colours and textures. We are still waiting for our ancient inherited huge red sofa to be recovered in a lovely faded patterned linen as that’s never been a favourite visually. Certain colour combinations evoke an adverse reaction - red and yellow - fried egg and tomato sauce ! What colours do you like in your living space ?

Our grand salon is gradually being transformed! These wonderful artists have applied their expertise using layers of natural pigments to breathe new life into the ancient stone walls creating luminosity and gentle elegance to this wonderful room. The fresco has been carefully renovated using the old techniques of water based pigments directly on lime. Tradional eggshell for window frames has a soft old blue sheen Today we begin cleaning and putting back furniture mirrors and paintings. The huge red velvet sofa is being renovated and recovered in a soft faded linen print by looking timelessly classical. This magnificent room has 2 sets of French double doors out to the north terrace with fountain,unparalleled views of the olive grove and village below and dining table for 18 . We still have availability to rent the whole Chateau in prime months of July and August. Temptation tantalisingly dangled ? Dm for details.

Morning light on old stone walls.. That fiercely cerulean blue sky is sharply clear hosting a myriad of nighttime stars. It’s cold - forecast to snow and already a lick of frost on the waking garden forms a hoary glaze. Snuggled inside we are decorating - scaffolding for 4m ceilings, furniture draped in sheets and plastic, radio playing old remembered songs . It’s our busy period making sure everything is ready by springtime for guests and our theatre spectacle begins once more

Winter warmer. Carrot and ginger soup with pecan nuts Fry 2 onions in a k**b of butter and a little olive oil. When soft and golden add 1kg chopped carrots, 2 chopped stalks of celery , a generous thumb of grated fresh ginger, chopped fresh rosemary salt and pepper cover with a lid and sweat down for 5-10 minutes. Add 1-1.5 litres of stock and simmer for half an hour. Blizz all with a hand blender and serve with crushed pecan nuts and a drizzle of olive oil. If you don’t have the pecans it doesn’t matter but it looks pretty and adds a little nuttiness which is always good :)) Winter - we can do it !!! # lefooding

Let the sun shine in ! This year we are physically separated and despite 3 flight cancellations have finally made it home for Christmas.
Uk family are all cooking together , trainsets and jigsaws, muddy walks with dogs ,shepherds in tea towels let loose with candles stuck in oranges already high from raiding the sweets in the advent calendar whilst other half has an altogether calmer more sophisticated celebration with his beautiful girls in Barcelona. Whatever you are doing wherever you are let’s hope it’s filled with love and a huge dollop of kindness. See you on the other side 🥰

Doesn’t look as droolingly mouthwatering as it tastes but believe me this Parmentier made with casseroled guinea fowl with thyme and sage topped with a buttery celeriac mash is delicious beyond words. Fight for the crispy bits and I promise there’s none left ! A winter warmer to delight Would serve 6 or 4 greedy piggies ! One guinea fowl (or free range chicken)jointed into 6 pieces 2 red onions roughly diced. 1 carrot chopped. 2 sticks chopped celery 200 g chopped mushrooms. 500mls chicken stock 1 tablespoon course ground mustard Small tub of crème fraîche Zest and juice of 2 lemons. 1 small celeriac 2 large potatoes. Fresh thyme and sage Salt and pepper. Butter and olive oil Brown the onion and guinea fowl pieces in olive oil adding the carrots and celery and stir Add half the mustard and all of the stock and cook covered in the oven at 180 degrees C for 1 hr. After an hour add the mushrooms ,thyme and sage , the rest of the mustard , crème fraîche , lemon zest and juice of 2 lemons and leave uncovered in the oven another half hour to reduce . Meanwhile boil the diced potatoes and celeriac together in salted water and mash with a good dollop of butter. Pour the casserole into a large ovenproof dish and top with the mash dotted with butter and more thyme returning to the oven to bubble and brown for another 15-20 minutes. Perfect with a leafy green vegetable and a glass of robust cote de Rhône red ! We are watching Bad Sisters on Netflix with the fire on Our new boiler from last year is renamed reliable Roger or Trusty Tristram - winters not so bad after all 😂.

We still have paper white roses in the garden but it’s considerably colder and yesterday cutting back hedges and tying in leggy stems on climbers was enough to whip colour from cheeks to become a dead ringer for Rudolph the red nosed gardener . We light the fire in the kitchen as light gradually fades and a pot of ginger tea and remnants of a sticky tarte tatin beckon enticingly. Mathieu plays outside chasing leaves whilst Merlin hasn’t left his little Aaron blanket all day. Happy Sunday everyone wherever you are

How to cheer up a cold rainy day ! Tahsheen. It looks like a cake but is layered saffron rice mixed with Greek yogurt and egg yolks sandwiched with sliced grilled aubergines and a layer of chopped onions , garlic and mushrooms flavoured with turmeric , saffron .cumin , allspice and garlic then baked in a buttered dish , turned out and sprinkled with pistachios ,barberries and chopped coriander. We had it with a homemade tomato sauce with oregano and a pinch of cinnamon. Fire on in the kitchen grate , local wine and excellent company. It’s a feast !

So simple and delicious it needed sharing. Homemade walnut pesto with tagliatelle! The pesto is just 3 good handfuls of fresh spinach , a bunch of coriander ( or basil or flat leaf parsley - just whatever’s to hand ) 2 garlic cloves crushed , grated Parmesan cheese , a handful of walnuts and a good slug of walnut oil ( or olive ) and wizz to a rough pesto paste adding sea salt and ground black pepper. . It stores in the fridge for up to three weeks and this makes a generous quantity. We had it on wholewheat tagliatelle but it’s wonderful drizzled on roasted potatoes or carrots in the oven or stirred into mashed potatoes. Endless possibilities !
