This book is all about Indian food that is great tasting, fresh, vibrant, and guaranteed to have your friends and family impressed too! There are a variety of recipes; some are shockingly simple, some are all about slow cooking and some are quite extravagant. As you will see during th
e course of this book, the majority of recipes are very far removed from traditional ‘curry house’ style dishes which have been developed for a specific British consumer palette. Trends show that more and more British people are travelling to newer countries in the search for a new and exciting food experience. With a growing global hospitality industry, people are travelling more and therefore, are becoming more food curious, they are developing a taste for authenticity. Today, every supermarket, whoever the customer maybe, has a ‘World Food Section’ which can only mean that there is a demand for World ingredients. With so many celebrity chefs and foodie shows on TV, most people prefer to cook their own food. The only problem is convenience, and in today’s busy society, how many people have the time to prepare a freshly cooked meal everyday? My book demonstrates authentic meals with a modern twist, most of which, won’t take as long as a curry but will still deliver the same flavour punches and equal amounts, if not more, of a fun impressive meal experience...

| KALE & COCONUT TOOR DHAL | 🥬🥥
Ever since I was a child I have been in love with all things lentils, beans, pulses and dhal!
And as an adult I'm so honored to have had so many amazing opportunities where I get to showcase that love for lentils 💛
From writing The Delicious Book of Dhal, to representing brands such as , as a chef and food consultant, one of my aims is educate others on healthy, sustainable and affordable cooking and what better ingredient to showcase those points than lentils!
My Kale & Coconut Toor Dhal mixes the traditional south Indian favourite with a twist, adding kale to the hearty lentil base for a nutty, rich taste. It’s low fat, protein-rich and full of goodness 🍴
It's beautiful and creamy, and the kale is perfectly wilted and soft.
Perfect sunshine food for sunshine weather ☀️
Also... Not only is this recipe rich in health-boosting nutrients that will leave you feeling content, but the lentils are also carbon negative, nitrogen fixing and an affordable source of protein too.

| BEER CAN CHICKEN | 🍻🐓
It's been so long since I've posted any foodie content on here! 😲
and life in general has kept me so busy for the last few years (not that I'm complaining- life is bloody awesome 🤩)
But the sun is shining here in Birmingham and I wanted to share some foodie inspiration... so here is one of my fave recipes of all time... BEER CAN CHICKEN that my brother and I made during lockdown 1.0 and I still think about to this day!
I’ve tried some amazing chicken in my time, I’ve eaten chicken all my life, I’ve eaten chicken in michelin star restaurants, heck I’ve even spent a year working for a poultry company tasting chicken everyday, but lasts night’s beer can chicken was something else.
The texture was buttery, melt in the mouth and insanely moist. We roast a chicken most weeks, so I hadn’t really hoped for anything extraordinary, but I was honestly blown away last night. Just Amazing!!
For an added smokiness, we also used beer soaked hickory wood chips in a smoking chamber too 🔥🔥🔥

It's British Pie Week and I don't know about you folks, but I'm on a mission to make sure I get a portion of pie of some form this week!
But for now, here is my South Indian Seafood Pie...
A classic British dish with an Indian twist 🇮🇳😏
The spiced, marinated seafood is gently simmered in a rich, creamy, South Indian inspired coconut sauce.
Once placed into a pie dish, the seafood masala is topped off with a spiced mashed potato topping, and then gently baked 😌

Dhokla... little steamed spiced sponges of deliciousness that just keep you coming back for more! Also known for being the ‘unofficial national favorite snack of Gujarat’ 🤣💛
The love I have for Dhokla runs in my blood, my grandmother makes the BEST Dhokla, and I have to say, my mother’s are on the same level, I guess it’s up to me to carry on the legacy and perfect the same level of deliciousness. | GUNPOWDER PAN SEARED PRAWNS 🔥🦐👌🏽
By 'gunpowder', I mean flavour explosive!💥
I say flavour explosive, but the marinade itself is made from just a few simple ingredients including crushed red chilli flakes, black pepper, crushed coriander seeds, crushed cumin seeds, paprika, sea salt and LOTS of olive oil.
I sear my prawns and leave aside for a minute to rest whilst I warm the residual marinade/ oil to make the most AMAZING sauce/ dressing/ dip 🤤
I find that when you use good quality ingredients such as fresh tiger prawns, you don't need to add many complex flavours, just a few simple ingredients to enhance the natural flavor.
The prawns are delicious and always go down an absolute treat with my family and friends 👌🏽

Last week I had the pleasure of attending the 21st Annual Gala Dinner hosted by the Birmingham Youth Sports Association (BYSA)
It always gives me great pleasure to attend the BYSA awards and gala dinners because it's so inspiring to see and hear more about what the organization does to empower and enrich the lives of young people through sports across our city.
In an ever changing and confusing world, organizations and charities such as BYSA have never been more important and fundamental to our societies and for the futures of the youth of today (and tomorrow!).
As always, the annual dinner was a wonderful evening celebrating the achievements, accomplishments, and influence BYSA has had across Birmingham City.
Here's to another reason for being so proud of our fantastic city 💙

This year to celebrate Diwali, I have had the pleasure of collaborating with ASDA to bring you this beautiful and scrumptious Paneer Dum Biryani.
I will show you a step by step video in my next post, (stay tuned!) but for now, come with me as I pop to my local ASDA store.
As soon as I walked into the store, I was so impressed to see the Diwali section and how there was a whole aisle of goodies.
Making a Biryani from scratch requires a whole host of ingredients, but luckily I managed to find everything I needed in just one trip to Asda ☺️

Elephant Atta will always hold a special place in my heart because the brand has been part of my life ever since I can remember. My family have been using Elephant Atta for over 50 years, and for 3 generations we have passed down family favourite recipes.
My childhood is filled with memories centered around a kitchen, and my earliest memories are helping mum to fill up the Atta (flour) bin (which, looking back, I loved doing as a kid!), and secondly, learning how to make rotlis. | LAMB DUM BIRIYANI | 😍♥️🔥 Okay guys, it's taken me a while, but here it is... My full recipe video for my Lamb Dum Biryani to celebrate the Jubilee weekend 🥳 As you may notice, there are a few minor changes from a traditional Hyderabadi biryani; firstly I used lamb fat instead of saffron water (blame the cost of living crisis!), and secondly I used a heavy weight instead of dough to trap in the steam. It took me all day but patience is definitely a virtue and I promise you, the more love and respect you give this dish, the more rewards you reap! Don't rush the steps and trust the timing. | THE GREAT BRITISH CURRY CRISIS | ‘Every week, two Indian restaurants are shutting down as the pandemic, changing consumer tastes, and Brexit takes a toll.’ I recently had the pleasure to be featured in this insightful and educational piece with @aj101east of @aljazeeraenglish to talk about the current Great British Curry Crisis, and also to share my experience(s) of how and what I’m doing to proactively keep Indian cuisine alive in the UK in a sustainable way. Sustainable not only for my business, but most importantly, for the planet too. Whilst curry houses may be in decline, the British food service sector is currently welcoming the rise of cloud kitchens, also known as ghost or dark kitchens. For the last few years, it’s clear to see that the food delivery market has exploded exponentially and the pandemic has certainly sped this along. The rise of cloud kitchens allows chefs and business owners like myself to launch our dream business with just a quarter of the start-up costs than if we were to open a traditional restaurant. When setting up @dhalingskitchenuk , @mrladdmedia , @jimishabir and myself eradicated the costs associated with setting up a restaurant such as the front of house overheads, rent, rates, utilities, waiting staff, etc. We have been able to focus solely on executing a strong menu from a well functioning and operating kitchen space. WINTER SPICED CHICKEN STOCK Okay so I guess there's no denying that Winter is well & truly in full swing 🥶 It's been so long since I've posted a new recipe video on here I'm actually really excited this evening 😆 Although I've drastically changed my diet recently (trying to be as plant based as possible!), I'm still very much all about combatting food waste. A few months ago I posted a video on my story where I was trimming the tips off chicken wings, I said rather than throwing them away, I'd freeze them down to make stock. I had not expected the response I received with lots of you messaging me asking how to make a fresh chicken stock (without using cubes or stock pots). So here it is guys, I finally got round to filming how I like to make a chicken stock. This is my go to recipe for chicken stock to be used in all sorts of dishes from soups, sauces, stews and gravies. It's even great for boiling noodles (makes a great noodle soup!), pasta, rice and veg in. If you don't like spice, simply leave out the chillies. Happy Good Friday 💛 I got ahead of the game this year and marinated my Easter Sunday leg of lamb centre piece a whole SEVENTY TWO hours before cooking. I know many of you will be planning on doing an Easter roast too, so I thought I’d share my marinade process with you all. And don’t worry guys, a 36 hour marination is not necessary, yes it will allow the joint more time to soak up all those amazing flavours, but so will a good overnight marinade process.... giving you plenty of time to get sorted before Sunday. I’ve left my recipe I follow for a SLOW ROASTED joint below, but if you prefer the joint left medium or medium rare, please do adjust the times (roughly a total of 1-1.5 hours). 👩🏽🍳 And top tip my loves ➡️ LEAVE YOUR JOINT COVERED IN A WARM PLACE TO REST FOR 30 MINS BEFORE CARVING❗️ Recipe below👇🏽 | INGREDIENTS | 1 leg of lamb 2 bulbs of garlic (cloves peeled) 5 sprigs of rosemary (stalks removed) 1 small bunch of thyme 1 tbsp salt 5 tbsp olive oil 2 tsp black pepper 3 tsp smoked paprika 1/2 tsp red chilli flakes 1 tsp coriander seeds 1 tsp fennel seeds 1 tsp English mustard 1 tsp wholgrain mustard 1 large lemon (zest only) Chunky carrots, onions and celery for gravy. | METHOD| Marinade as per the video To cook; 1. Take your joint out the fridge 1 hour before cooking to allow the meat to come up to room temperature. 2. Scrape off as much marinade from the joint as possible (yes even the slits!). Save the marinade for later. 3. Preheat your oven to 190C or gas mark 5. 4. Place the chunky chopped vegetables in a large baking tray along with any robust/ woody herbs of your choice and 1 glass of water. (To help release more cooking juices for your gravy). 5. Lay a rack on top of the baking tray (ensuring it’s stable), and place the leg of lamb on top the rack. 6. Roast the joint in your hot oven for 30 mins, in which time it should be browned all over. 7. Once browned, remove the joint from the ove

SCOTCH BONNET, HOT CHILLI, GARLIC & RED PEPPER SAUCE 🌶🧄🍅🔥
♥️ Well here it is my loves, as promised yesterday, I’m so excited to share the recipe for my Scotch bonnet, hot chilli, garlic and red pepper sauce. 👌🏽 It's one of my favourite sauce recipes, and always goes down a treat with my family. 🥵 With lots of explosive flavours going on, the sauce needs a few days to settle, so I made a large batch earlier on in the week. and will be tasting every day until the weekend to monitor the seasoning and heat levels. 🌶 As you can see, it is a little fiddly as I like to peel and deseed the shallots, garlic, peppers and larger chillies (which can be quite therapeutic!). To be honest, there’s absolutely nothing wrong with blitzing down the peppers and chillies with the skin and seeds remaining, but I find that the finished sauce is always slightly more bitter and not as balanced. ☺️ This batch will keep us going for a few weeks I imagine. 🤗 So, now that you’ve got the recipe, will you be giving it a go!?

| SPICY TAWA SIZZLER VEGETABLE PASTA | 🔥 Rajah Spices and I are so pleased to share one of my most favorite fusion recipes, my Spicy Tawa Sizzler Vegetable Pasta. So I think it's no lie that every Indian household probably has their own 'Indianfied' version of pasta, (my apologies in advance to Italians- no angry comments or DM's please). Just like roast dinners, beans on toast, and the full English breakfast, for years Indian households have also been putting their own little twist on pasta. Together, in #partnership with Rajah Spices, I'm so excited to share a recipe that my family and I have been eating for years. Recipe below 👇🏽 INGREDIENTS: FOR THE VEG: 1 diced green pepper 1 diced red pepper 1 diced red onion ½ diced aubergine 1 diced courgette 3 tbsp. olive oil 1 tsp. salt 1 tsp. Rajah Coarse Black Pepper ½ tsp. Rajah Crushed Red Chilli Flakes 1 tsp. Rajah Whole Coriander Seeds 1 sliced green chilli FOR THE PASTA SAUCE: 3 tbsp. olive oil 1 tsp. Rajah Cumin Seeds 2 crushed garlic cloves 1 finely diced onion 1 tsp. salt ½ tsp. Rajah Ground Turmeric 1 tsp. Rajah Ground Paprika 1 tsp. Rajah Chilli Powder 1 tsp. Rajah Ground Cumin 1 tsp. Rajah Ground Coriander 3 tbsp. tomato puree 5 medium chopped plum tomatoes 500ml vegetable stock 2 tsp. brown sugar Ripped basil leaves for serving 3 cups penne pasta Water to cover METHOD 1. Preheat your oven to 180 degrees. In a bowl, mix the olive oil, salt, black pepper, red chilli flakes, coriander seeds and the sliced green chilli to create a marinade. 2. Add the chunky diced vegetables to the oil and shake well. Lay them out on a large tawa/skillet/griddle pan. If you don’t have one, a baking tray will work just as well! Roast your veg for 20 minutes, shaking occasionally so that they char evenly. 3. Prepare the pasta sauce. In a saucepan, heat the olive oil and add the cumin seeds. Once they have sizzled and cracked, add the crushed garlic and fry for 30 seconds. Add the
So on Thursday I made my Hariyali Chicken Kebabs, Crushed Bombay Potatoes & Masala Peas live on Zoom for my Supper Club Social with TAG Network Midlands From start to end, with virtually no prep done before hand, this whole platter took me 30 mins to create!! Literally the most easiest, tastiest, delicious, fuss free, stress free meal and great for BBQ season too. I normally marinade my chicken the day before cooking, but with such a fresh, aromatic and zingy flavour it worked just as well cooking the kebabs straight after marinating. The ingredients are; | HARIYALI CHICKEN | 1kg Chicken thighs 2 tbsp Vegetable Oil 3 tbsp Natural Yoghurt 1 handful baby spinach 1 handful fresh mint leaves 1 handful fresh coriander 3-4 green chillies 2-3 garlic cloves 1 tsp cumin powder 1 tsp coriander powder 1 lime salt black pepper | CRUSHED BOMBAY POTATOES | 500g new potatoes 4 vegetable oil 1 tsp cumin seeds 1 tsp mustard seeds 1 tsp grated garlic 1 tsp grated ginger 2 green chillies, finely chopped 1 tsp turmeric 1 tomato, roughly chopped 1 tbsp roughly chopped coriander | SPICED PEAS | 4 vegetable oil 1 tsp cumin seeds 1 tsp grated garlic 1 tsp grated ginger 500g frozen peas 1/2 tsp crushed red chilli flakes coriander/ mint to garnish | EQUIPMENT | stick blender/ food processor chopping board oven baking tray 2 pans
