The @bloom.stays team had a wonderful vineyard tour and tasting session at @terlingham_vineyard this week.
It was fascinating to learn about their sustainable and natural ways of producing some very tasty wine!
With many awards for both their wines & gin it’s certainly worth a trip, especially for the sea views just beyond the vines.
Plus it was too good not to share, so it only seemed right to leave with bottles for friends & family too.🛍️
Safe to say we will be back for more! Thanks for having us.

🥗For the salad:
1 salmon side or 3-4 salmon fillets (buy cooked if you’re short on time)
2 bay leaves
1/2 tsp mustard seeds
6 mixed peppercorns
8-10 asparagus spears (our are from @lowerladysdenfarm)
100g green beans
300g jersey potatoes
1 baby gem cos or romaine lettuce
2-3 chopped spring onions
1 tbsp of each: chopped parsley, cress, chives
1 knob of butter
Salt & pepper
1 handful of toasted walnuts
🥄 For the vinaigrette:
1 shallot
5 tbsp walnut oil
2 tbsp white wine vinegar
1tsp runny honey
1tsp Dijon mustard
Salt & pepper
Perfect for al fresco dining and packed full of goodness that takes no time at all to throw together.

🥖Ingredients:
100g porridge oats
160g strong white bread flour
160g wholemeal flour
10g bicarbonate of soda
6g salt
35g black treacle
10g honey
350ml buttermilk
(a little water to loosen the dough if necessary)
🧀 We paired ours with a selection of cheese from @cheesemakers_of_canterbury we picked their goat’s cheese, camembert and Ashmore, along with their gorgeously sweet, rhubarb chutney.
🍯If you have any local honey left over from breakfast that would also make a great combo with the bread.

🥞For the pancakes:
2 ripe bananas
80g porridge oats
1 tbsp Greek yogurt
2 medium or large eggs
2 tsp baking powder
A splash of vanilla essence
A pinch of salt
Butter and sunflower oil for frying
🫐For the compote:
350g blueberries
2tbs icing sugar
A squeeze of fresh lemon juice
A little water to loosen if necessary.
To serve:
🍯Maple syrup or honey
🍓Chopped fresh fruit

Smoked Salmon Mousse On Cucumber 🥒🍣 Another delicious, pretty canapé recipe for Christmas celebrations.

Ingredients:
100g Smoked Salmon
50g Cream Cheese
Juice of half a lemon
50ml Double Cream
A tablespoon of dill - plus extra for garnish
1 Cucumber
Lemon zest to decorate
Method:
Pop the salmon, cream cheese, lemon juice and dill in a mixer. Add black pepper and blitz. Whip the cream until thick, then fold into the salmon mix. Put in a piping bag (or you can use a teaspoon, it will taste the same). Slice the cucumber about 1.5cm thick. Pipe or spread over salmon mix. Fridge until needed and garnish with some lemon zest, dill and black pepper.
