We sadly lost this magnificent Oak in the last storm. Her abundance has gifted us five dumpy bags of wood chip to be used , hundreds of fire logs and several beautiful and unique boards that Ed hopes to turn into furniture. Any off cuts are left in piles to provide food and shelter for wildlife.

The land is alive with wildlife right now, this week we’ve had regular visits on the pond from the heron and kingfisher, the deer are taking shelter under the oaks. The children have been spotting all kids of varieties of butterflies and bees. Here they found a little frog 🐸 it’s so amazing to watch them grow amongst all this wildlife 🦋

AHHHH……KICHADI
Sharing this wonderful healing Ayurvedic dish. I always turn to this when I need a simple cleanse and with spring in the air it feels like the perfect time. I prepare Kichadi with a variety of vegetables for a few days alongside plenty of water, fresh fruit, steamed vegetables and cumin & coriander.
It always feels cleansing and nourishing to my body.
There are many variations to make Kichadi on the internet, just search for one that’s suites you. ✨

We couldn’t do it without all the many helping hands of wonderful friends and volunteers, we keep them all well fed and watered on last years homemade cider and cream teas 🍻

We’ve been indulging in a lot of banana bread so far this winter 🍌
I added a good dose of freshly grated ginger to this most recent one to help stoke the digestive fire in these cooler days. It was soooo good! Recipe follows ~
3 Tbsp/22g ground flaxseed or 2Lrg eggs
1/2 cup/110g water
4 very ripe banana’s
1/2 cup/115g extra virgin olive oil/melted coconut oil
1/2 cup/100g granulated sugar
1 Tbsp finely grated fresh ginger
2 Tsp vanilla extract
1cup/100g almond flour
3/4/105g brown rice flour
1/2 Tsp rock salt
3/4 Tsp baking powder
1 Tsp baking soda
1/4 cup/25g sunflower seeds

Preparation

1. Preheat oven to 180c, line a 28 x 7 loaf pan with baking paper.
2. In a medium bowl combine the flaxseed and water, whisk to combine and set aside for 10min or use 2 x eggs
3. Add 3 x banana’s and mash until fairly puréed. Add the sugar, vanilla, ginger and oil mix until smooth.
4. Whisk together the almond flour, rice flour, salt, baking powder and soda. Pour into the banana mix and stir until the batter comes together. Fold in half the sunflower seeds.
5. Pour into the loaf pan. Cut the remaining banana in half lengthways and gently press into the top of the batter. Sprinkle over the remaining sunflower seeds and bake in the oven for 45 - 50 min

* the rice flour can be replaced by regular all purpose flour.
