🌚 DARK SKIES 🌚

Pembrokeshire’s wild and rugged coast boasts some of the best dark sky opportunities in the country, where it is possible to observe the spectacle of the Milky Way or the constellations such as Orion with the naked eye.

The Pembrokeshire Coast National Park Authority has worked with the National Trust to establish a necklace of Dark Sky Discovery Sites, the nationally-recognised designation for top stargazing spots across the UK, around the coast.

Wherever you are in Pembrokeshire, you’re not far away from one of these sites, which offer dark skies and easy access.

Add to this the added dimension of being able to view the night sky as you look out to sea and you’ll see why the area is ideal for those seeking the dark skies, tranquillity and peace.

💫 R E C I P E 💫

🫐 Brie & Cranberry Flowers 🧀

(Makes 8)

INGREDIENTS

• 1 sheet puff pastry
• 200g Brie
• Cranberry sauce
• 1 egg yolk with 1tsp milk
• Honey for drizzling
• Chopped walnuts & fresh rosemary to decorate

METHOD

1️⃣ Make sure the Brie is cold - the freezer for 30 minutes is good

2️⃣ Preheat oven to 180C

3️⃣ Slice or cube the Brie very thinly

4️⃣ Cut pastry into 4 rectangles

5️⃣ Spread cranberry sauce onto each and then layer on the Brie

6️⃣ Roll each rectangle up carefully; then slice in half, stand on its end, and pull the sides round/down to tuck under into circular ‘flower’ shapes

7️⃣ Place onto a baking sheet and sprinkle with salt and pepper

8️⃣ Egg wash the flowers

9️⃣ Bake for 30-35 minutes until crunchy and flaky

🔟 Drizzle with honey as soon as they’re out of the oven; decorate with a sprig of rosemary and a sprinkle of walnuts

Time to bring out this recipe again 🤤

RECIPE 🧀
PROSCIUTTO & BRIE CUPS
Makes 6 cups (easily multiplied for more!)
INGREDIENTS
• 15-16 slices prosciutto
• 6 bite size pieces brie
• Handful chopped pecan nuts
• Runny honey
METHOD
1️⃣ Preheat the oven to 180 degrees
2️⃣ Using a Yorkshire pudding tray, line 6 holes with the prosciutto
3️⃣ Place a bite size piece of brie into the middle of each prosciutto nest
4️⃣ Top each cup with pecans
5️⃣ Drizzle honey on to the brie only (not on the prosciutto as it will burn)
6️⃣ Bake for between 16-30 minutes, checking regularly so they don’t burn
7️⃣ Serve with more honey drizzled over the cups

Amazing Tolkien themed map of Cymru!

J.R.R. Tolkien, the genius behind “The Hobbit” and “The Lord of the Rings,” was not only a literary mastermind but a philologist deeply connected to Cymru. His works are steeped in the influence of Welsh language, mythology, and landscapes. In his own words, he referred to Welsh as the “senior language of the men of Britain.”

Tolkien’s appreciation for the Welsh language went beyond mere admiration. He embedded Welsh linguistic elements into his fictional world. The Elvish languages of Quenya and Sindarin, which feature prominently in “The Lord of the Rings,” exhibit clear Welsh influences, both in phonetics and structure. This linguistic artistry lent authenticity to Middle-earth.

The mythological tradition of Cymru was another wellspring of inspiration. The tale of the Mabinogion, a collection of Welsh legends, offered parallels to Tolkien’s storytelling. Elements of the Mabinogion, such as the enchanted Cauldron of Rebirth, are visible in Tolkien’s works.
