I've been working with lava seaweed in preparation for our seaweed and sushi foraging event on the 14th April coinciding with national lava bread day. Dried seaweed is a wonderful ingredient in the kitchen, imparting deep umami richness to all it touches. Cold smoking the seaweed before drying adds another layer of flavour.

Everything loves to eat ceps, but this is the first time I have seen a dung beetle munching away. Seems to have hollowed out the stem and travelled all the way to the cap.
