Wow, we have just about recovered from Aberdovey Food Festival!

Carl cooked up some gorgeous beef briskets on the Green Egg, and the fact that you all sold us out by 1:30pm is just incredible! A big thank you to everyone who came by on Sunday, it truly made our day.

Carl, thank you for joining us, you absolutely smashed the street food!

We’re gearing up for an incredible day at the Aberdovey Food Festival this Sunday, 18th August! 🎉 Join us at our stand where the talented Carl Cleghorn will be cooking up a storm. Along with 2 beautiful street food dishes on offer, we will also be joined by Tanners Wines who will be serving up some fabulous wines!

Here’s what’s on offer:

🍖 Slow Cooked Brisket finished off on the BBQ with charcoal mayonnaise, sriracha, pickled carrot, sesame, spring onion, and coriander.

🌱 Spiced Butternut Squash with miso mayonnaise, sriracha, pickled carrot, sesame, spring onion, and coriander.

Don’t miss Carl Cleghorn on the demo stage at 12:30 PM, where he’ll showcase his skills with a stunning Poached Dover Sole stuffed with scallop and truffle mousse, served with cauliflower and a rich chicken & truffle sauce. 🎣🍴✨

DINNER WITH CHEF CARL CLEGHORN

Head Chef & Owner of Tyme, Carl Cleghorn is joining us at Proper Gander to cook a beautiful tasting menu on Friday the 13th September.

Carl is an acclaimed chef renowned for his exceptional culinary skills and innovative approach to modern cuisine. Previously holding three AA rosettes at a luxury 4 red star hotel in Bristol, Chef Cleghorn has established himself as a leading figure in the culinary world. His dedication and talent were further recognized when he became a semi-finalist in the National Chef of the Year competition.

With an impressive career, Carl has served as head chef in multiple Michelin-starred kitchens across the Southwest including Manor house in castle combe and Olive tree in Bath working alongside some of the uk leading chefs, where he honed his craft and developed a profound appreciation for fine dining.

His journey in the culinary world has now led him to launch his own venture, Tyme Restaurant by Carl Cleghorn, where he continues to delight patrons with his exquisite dishes & luckily for you lot we get next dibs for a pop up in September🔥

Ourselves and chef Carl Cleghorn will be heading to Aberdovey food festival this August to bring Wales a taste of Sauce!

Carl has been trialling some amazing street food dishes and we can’t wait to share it with you all. The Festival will feature cookery demonstrations by leading local chefs as well as the opportunity to sample and purchase a wide range of amazing local Welsh produce. Chefs and suppliers will be putting on demonstrations throughout the day, including wine tasting & cocktail classes.

The festival will be free of charge and will be open from 10:30am- 4:30pm Sunday 18th August.

We hope to see some familiar faces in Aberdovey!

•Charred Hispi cabbage, brown butter, miso glaze, elderflower crème fraiche

•Scallops, rhubarb hollandaise, salt baked kohlrabi, pumpkinseed oil

•Coconut pana cotta, apple balls, apple & wasabi granita, lovage oil
