Who fancies a Macau Oat Cream Coffee and Pistachio - Pale Ale (5%) ? Sounds like an unusual combination, but trust me, it's amazing !!
Macau is one of our earliest and most enjoyed beers. Originally brewed as a white stout (a pale ale with coffee), Macau is brewed using 33.3% rolled oats and melanoidin malt to produce a silky smooth body and light fluffy head.
@carnivalbrewingcompany added a delicious blend of fruity Guatemalan coffee from our friends at @neighbourhoodcoffee in Liverpool, which gives Macau a subtle roasted flavour. We added coffee at wort making stage and dosed it after fermentation with a freshly brewed batch to add layers of flavour, then added a touch of natural pistachio flavouring to complement the coffee.

๐ง๐บ Water, the unsung hero of brewing, shapes the soul of beer. Liverpool's water profile offers the perfect canvas for certain beer styles. Discover how water quality impacts brewing and beer taste.
Brewing beer is an art form that has been perfected over centuries. It involves a delicate balance of ingredients, including grains, hops, yeast, and one often overlooked element: water. While it may seem like a simple ingredient, water plays a vital role in shaping the flavor and character of beer.
In Liverpool, where breweries have been operating since the 18th century, the local water profile offers a unique advantage for certain styles of beer. Due to its location near the River Mersey and Irish Sea, Liverpool's water is naturally soft with low mineral content. This provides a perfect canvas for brewing light and crisp beers such as pilsners and lagers.
On the other hand, cities like Dublin and Edinburgh have harder water with higher mineral content. This type of water is better suited for creating full-bodied and malty beers such as stouts and porters. In fact, the famous Guinness Stout owes much of its distinctive flavor to the hard water in Dublin.
Water not only affects the overall taste of beer, but it also plays a crucial role in the brewing process itself. The minerals in the water can affect how efficiently enzymes break down starches into sugars during mashing, which ultimately impacts the alcohol content and mouthfeel of the finished product.
Brewers must carefully consider their local water profile when crafting their recipes to achieve desired flavors and characteristics.

Barrel aged beer
๐ข๏ธ๐บ Have you tried barrel aged beers ?
Discover the art of barrel-aging and the depth it adds to beer. Each barrel type, from bourbon to wine, imparts unique flavors, creating complex and memorable brews. Dive into the process and taste the difference.
Barrel-aging has been around for centuries, with brewers using wooden barrels to store and transport their beers. However, it wasn't until the craft beer revolution in the
1980s that barrel-aging became a deliberate and sought-after technique.
The process of barrel-aging involves taking finishe beer and transferring it into wooden barrels for an extended period of time, typically several months to a year. During this time, the beer interacts with the wood and any remaining liquid or residue from the previous contents of the barrel, infusing it with new flavors.
One of the most popular types of barrels used for aging beer is the bourbon barrel. These oak barrels ar previously used for aging bourbon whiskey and have absorbed some of its flavors, such as vanilla , caramel, and oak. When beer is aged in these barrels, it takes on these flavors as well as the characteristics of the wood itself.
Another popular type of barrel used for aging beer is the wine barrel. Just like with bourbon barrels, wine barrels have been previously used to age wine and impart their own unique flavors into the beer. Wine barrels can add fruity or tart notes to the beer, depending on what type of wine was originally stored in them.
Barrel-aging has become a popular technique among craft breweries because it allows them to create complex and unique flavor profiles in their beers. It also adds depth and character to the finished product, making it stand out from other beers on the market.
