Native to Cappadocia/Central Anatolia, Emir is one of Turkey’s premier white grape varieties.

Emir means “ruler”, “lord” or “prince” and it is believed that this particular grape variety has earned its name by being the favorite at the tables of rulers and lords. It’s been used since Roman times to make crisp, refreshing wines.

Emir makes straw yellow colored wines with green reflections; famously with green apple and minerals on the nose. On the palate it makes lively, crisp wines. Wines are light-medium bodied, light yellow color with high acidity.

Mainly grown in the South East Anatolia region, Boğazkere is Turkey's answer to Cabernet Sauvignon. The grape makes dark, full bodied wines with dense tannins, medium to high acidity, and complex flavor profiles which explain why it means "throat burner" in Turkish. It is often found blended together with Öküzgözü, another staple indigenious grape of Turkey.

Library of Celsus / Ephesus

The 3rd largest library of the ancient world after Alexandria and Pergamon libraries. Dating back to early 2nd century, the library was built to honour proconsul of the Asia Province of Rome, Tiberius Julius Celsus by his son.

The four female statues adorning the façade represent the four values of Celsus; wisdom(Sophia), knowledge(Episteme), intelligence(Ennoia), virtue(Arete).

Turkey's most commonly planted black grape Öküzgözü means "bull's eye". It takes its name from its large, round, nearly black berries.

Öküzgözü grapes usually make medium bodied wines with fruity flavors, some tannins, and rather lively acidity; an acidity that makes it a great grape for rosé wines. It is safe to say that Öküzgözü is Turkey's answer to Merlot.

Turkey has one of the oldest winemaking traditions in the world that stretches back to 2nd millennium BCE. It was so engrained within the ancient society that during the Hittite period there were even written viticulture and winemaking regulations.

Today, Turkey is home to over 1200 grape varieties, of which around 35 have currently been used in wine production. With 448.000 hectares, Turkey covers the 5th largest vineyard area in the world and ranks 6th in grape production with 4.2 million tonnes. Turkey produces approximately 8 million litres of wine a year.

EZME: A distant cousin of Mexican salsa, ezme is essentially made by mashing together tomatoes, green peppers, onions, garlic, and lemon juice.

Where it becomes authentic and takes on the Turkish twist is when these veggies combined and fused together with olive oil, red pepper paste, chilli flakes, thick textured balsamic-like sour pomegranate molasses and a pinch of mint.
