The Gift of Now
As we step into a new year, customary full of resolutions and plans, I find myself pausing, caught in a moment of reflection.

Life, as we all know, is unpredictable—its twists and turns often catching us unaware.

Yesterday, I received heartbreaking news that a dear friend has passed away suddenly. The shock has left me feeling numb, a stark reminder of how fragile and fleeting life can be. She was someone who only last year started her golden life retirement era with much excitement, plans and abundant time for her creativity.

She was my crafting companion, my honest critic, and most importantly, my friend. We laughed, created, worked together and shared dreams. I always thought there would be more time.

This loss has stopped me in my tracks, urging me to take stock of what truly matters: the moments we create, the relationships we nurture, and the care we give—to ourselves, and to those around us.

So, as we begin 2025, I want to share this simple wish with you:

✨Slow down.
✨Be present.
✨Make time for what and who matters.

Reach out to family members, friends, or even strangers you cross paths with. Say what needs to be said, do what brings you joy, and cherish the connections that make life meaningful.

We cannot control life’s surprises, but we can ensure that, when they come, we carry little regret.

Make sure 2025 is a year filled with presence, love, and the courage to embrace life wholeheartedly each and every day.

Welcome to January in Scotland – A Month of Tradition, Celebration, and Creativity!

As we step into the New Year, January in Scotland may be cold, with short days and bracing winds, but it's a month full of tradition, music, and reflection. From vibrant festivals to the heartwarming celebration of our national poet, January has much to offer.

Here are some notable dates to look forward to this month:
🎵 Celtic Connections: Scotland's largest winter music festival kicks off on 18th January in Glasgow, showcasing traditional folk and contemporary music from Scotland and beyond.
✨ Glasgow 850 Opening Night: Mark your calendars for 16th January! Glasgow begins its year-long celebration of 850 years of history with an unforgettable evening of lights, music, and storytelling.
🎉 Burns Night: On 25th January, we honour Robert Burns, Scotland's beloved national poet. Gather with friends and family for traditional suppers of haggis, neeps, and tatties, accompanied by whisky and recitals of Burns' poetry.

Traditionally, January in Scotland was a time for keeping hands busy indoors. Heritage crafts like knitting woollen scarves, weaving tartan patterns, and making beeswax candles were cherished activities, perfect for warding off the winter chill. Embroidery, often used to personalise household items, and basket weaving, using natural materials gathered in earlier months, were also common.

🥧 A Taste of Tradition: Scottish Steak Pie Recipe 🥧

It is not too late to start the New Year with a classic favourite! Perfect for a cosy gathering on New Year's Day or Hogmanay celebrations.

Here's how to make it:

Ingredients:

1kg stewing steak, cubed
1 large onion, finely chopped
500ml beef stock
2 tbsp plain flour
2 tbsp vegetable oil
1 tsp Worcestershire sauce
Salt & pepper to taste
1 sheet puff pastry
1 beaten egg (for glazing)
Method:
1️⃣ Heat oil in a pan, brown the steak, then set aside.
2️⃣ Sauté onions until soft. Stir in flour and cook for 1 minute.
3️⃣ Gradually add beef stock, stirring to avoid lumps. Add Worcestershire sauce, salt, and pepper.
4️⃣ Return the steak to the pan, simmer on low heat for 1.5–2 hours until tender. (💡I use the slow cooker on HIGH setting for 2 hours to get the meat really tender.)
5️⃣ Transfer to a pie dish, let cool slightly. Top with puff pastry, seal edges, and brush with beaten egg.
6️⃣ Bake at 200°C (180°C fan) for 25–30 minutes or until golden.

Serve with buttery mash and peas for the perfect Scottish meal! 🥔🍽️

This iconic Scottish sweet is loved for its rich, buttery flavour and crumbly texture. It’s a treat that’s simple to make yet utterly irresistible – perfect for sharing or indulging yourself.

Want to try making it at home? Here’s a fool-proof recipe to get it just right!

Ingredients
200g unsalted butter
450g caster sugar
400g tin of condensed milk
Method
Prepare Your Tray: Line a square baking tin (about 20cm) with greaseproof paper.
Melt Butter and Sugar: In a large, heavy-bottomed pan, gently melt the butter and sugar together over low heat, stirring continuously.
Add the Condensed Milk: Once the sugar has dissolved, stir in the condensed milk.
Heat and Stir: Bring the mixture to a gentle boil, then simmer over low heat for 10–15 minutes. Stir constantly to prevent sticking – the mixture should turn a lovely golden colour.
Test for Readiness: Drop a little of the mixture into cold water. If it forms a soft ball, it’s ready!
Pour and Set: Pour the mixture into your prepared tin and leave to cool at room temperature. Once firm, cut into squares and enjoy.

Nestled in the heart of Midlothian, just outside Edinburgh, Rosslyn Chapel is one of Scotland’s most fascinating landmarks. Built with incredible craftsmanship and steeped in mystery, the chapel has captivated visitors for centuries with its intricate carvings and legendary connections.

🏹 History & Mysteries:
Rosslyn Chapel, originally known as the Collegiate Chapel of St. Matthew, was founded by Sir William St. Clair of the powerful Sinclair family. It was intended as a place of worship and a legacy for the St. Clair lineage. The chapel’s detailed stone carvings feature biblical stories, mythical creatures, and enigmatic symbols that have sparked countless theories about hidden messages, links to the Knights Templar, and even the Holy Grail.

Construction began during a time of religious and artistic flourishing, and although the original plans were far grander, the stunning chapel as we know it today was completed in just a few decades. Its beauty has earned it a place as one of Scotland's most beloved architectural wonders.

Standing at 939m (3,081 ft), Mount Keen is a solitary gem on the eastern edge of the Grampian Mountains in Aberdeenshire. Its accessible paths and stunning views make it a favorite for both seasoned hikers and first-time Munro-baggers.

🌟 Highlights:
Location: Start your hike from Glen Mark, near Edzell.
History: Follow the ancient Mounth Road, once a drovers’ route.
Scenery: Enjoy lush glens, rugged slopes, and sweeping vistas over the Cairngorms, Angus Glens, and even the North Sea on a clear day.

I’ll never forget that moment—sitting alone under a palm tree on Sentosa Island.

The warm white sand surrounded me, the sea stretched endlessly blue, and in the far distance, container ships drifted in and out of Singapore’s busy harbour. It was breathtakingly beautiful.

I’d spent the day exploring on my own, soaking up the vibrant sights and sounds of Singapore. Even the dodgy taxi ride from the city to the cable car station didn’t faze me—I kept my cool and carried on. But as I sat on that quiet beach, with no locals or tourists in sight, the loneliness crept in. Tears rolled down my face as I realised what was missing: someone to share it with. 🏝️

That feeling stayed with me for a long time.

Since then, I’ve been lucky to visit palm-fringed beaches in other parts of the world, always with good company to make the memories even sweeter. 😊

But did you know you don’t need to go far for palm trees and stunning sandy beaches?

Scotland’s west coast, warmed by the Gulf Stream, boasts both. While you won’t find them side by side, the combination of exotic plants and sweeping coastlines is nothing short of magical.

As the year comes to a close, I'm officially signing off for the holidays. The office will be closed from 3rd December 2024 and will reopen on 6th January 2025.
