🍓🥝 Fruit Salad Cheesecake : A Refreshing, Fruity Delight! 🍍🍒
This Fruit Salad Cheesecake is a burst of freshness with a creamy filling loaded with juicy pineapple, grapes, mandarin oranges, and cherries. It’s the perfect no-bake treat for any occasion, blending classic cheesecake flavor with a delightful fruity twist!
Ingredients:
For the Crust:
1 ½ cups vanilla wafer crumbs
2 tbsp melted butter
For the Filling:
1 (20 oz) can crushed pineapple, drained
¾ cup granulated sugar
½ cup cold water
2 envelopes unflavored gelatin
8 oz cream cheese, cubed
1 ½ cups halved seedless grapes
1 (11 oz) can mandarin oranges, drained and halved
1 (10 oz) jar maraschino cherries, drained and chopped
½ cup finely chopped pecans
2 cups whipped topping
Directions:
Make the Crust:
Mix wafer crumbs with melted butter.
Press firmly into the bottom of a 9-inch springform pan. Set aside.
Prepare the Filling:
Heat pineapple and sugar in a saucepan.
Dissolve gelatin in cold water, then add to pineapple mixture.
Add cream cheese, stirring until smooth. Cool slightly.
Fold in Fruits & Nuts:
Mix in grapes, mandarin oranges, chopped cherries, and pecans.
Gently fold in whipped topping until well combined.
Assemble & Chill:
Pour the filling over the prepared crust.
Refrigerate overnight until fully set.
Serve:
Remove from the springform pan, slice, and enjoy chilled!
