Relax in the luxurious outdoor 4 person jetted hot tub style bath or in our outdoor woodland cinema, where you can watch netflix under the canopy of your own ancient woodland. Or in front of the fire listening to the sounds of the rapids and the calls of the birds.

Walk straight from your gate onto footpaths or mountain bike trials. Or wonder down 1 the Riverside or ride the hand ferry across the bank to have a fabulous lunch in the pub. Do not worry there is another wonderful local just 500m away. Yet you are away from any noise, cars or footfall in your private woodland hideaway.

Wild garlic season

Here is our favourite recipe... please share yours

YOU WILL NEED

1 can chickpeas

1 large lemon

60 ml tahini,

1 small garlic clove, minced

50 grams wild garlic roughly torn

2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving

1/2 teaspoon ground cumin

Salt to taste

2 to 3 tablespoons (30 to 45 ml) water

Dash ground paprika or sumac, for serving

DIRECTIONS

In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.

Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until you reach the perfect consistency.

Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.

Add the olive oil, minced garlic, wild garlic cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes.

It is a warning not to discard your winter clothes until the hawthorn is in flower, as cold snaps can catch you out.
Blooming freezing out today. Log burner back in use.

The hawthorn flower in the local hedgerows make me soo happy. Summer days are on the way. I cannot hide my happy face

When we redesigned the bedrooms at Rapids Cottage, we wanted to ensure that the space was multipurpose so that we could cater to families, girly getaways etc.

To best utilise the space, we decided to make one of the bedrooms transitional from a king size bed to two singles, which as you can see from the carousel of images lends themselves quite nicely to the space.

Hello you lovely bunch,

It's been a while since we have said hello...

So hello. I am Holly, one half of the proud owners of The Rapids Cottage. Some called us crazy when we decided to embark on the journey of purchasing a holiday home in the midst of a pandemic, but we wanted to make something positive out of lockdown. My husband and I have forever dreamt of having a space where we could escape the hustle and bustle of everyday, and live a more rustic, country life with our two sweet boys. Although The Rapids Cottage isn’t located far from our family home, it feels a million miles away and gives us plenty of space to just pause...

It brings us great joy to be able to share our secret escape with each of you to be able to call The Rapids Cottage ‘home’ if even for a short time. We hope you love it as much as we do, as every inch of it holds a piece of our hearts.

We have had some lovely questions about our table display. This was our girly day at the cottage. Foraging, then cooking up a storm and creating a banquet fit for, well, friends that have been separated for so long. I'll tell up the story ... don't worry it was not all work and no play. In fact it was mostly play.
