This simple cheese bread known as khachapuri is the most famous dish in Georgia. It is traditionally topped with melted cheese, eggs and butter. There are different types of khachapuri, and even though some new cheese varieties such as mozzarella and feta have been incorporated in the dish, the most common additions still include traditional Georgian Sulguni or Imeretian cheese.

It is shaped into different forms, and depending on the baking procedure and its form, it can be consumed individually or shared. Two of the most common varieties include the Imeretian khachapuri, shaped into a circular form, and Adjaran khachapuri, the open-faced version topped with butter and a raw egg on top.

This closure, in place since spring 2020, continues to be a measure for pandemic control. At present, only foreign nationals may exit Azerbaijan via land borders, with others allowed to cross only by air.

This weekend, on September 30th and October 1st, Tbilisi will be alive with the vibrant festivities of Tbilisoba. If you've never heard of Tbilisoba, sit back, and let us give you a tour of this extraordinary annual celebration that honours the city of Tbilisi, its history, and its cultural richness.

What is Tbilisoba?
Tbilisoba is an annual festival celebrated in Tbilisi, the capital city of Georgia. This tradition dates back to 1979 and was initiated to honour the history and culture of the city. The festival showcases everything that makes Tbilisi unique: its history, food, wine, and music. It is an event where the past meets the present, where tradition and modernity collide.

History of Tbilisoba
Tbilisoba was established by Eduard Shevardnadze, who was then the head of the Georgian SSR. The festival was intended to boost the city's morale and civic pride. From the initial years, it received immense love from the locals and became a staple annual celebration.
