UPDATE - Greece opens its borders on JUNE 15th! As announced by the officials,there will very soon be a list of countries which Greece will be accepting visitors from - this list is to be regularly updated and the countries which have had a low number of cases and deaths will be on the list first. Therefore, Balkan, Eastern European and Baltic countries will definitely be there. Also, countries such as the US and Australia will also be considered. Obviously, Greek tourism needs visitors from countries such as Germany, the UK, Scandinavia etc, so this is why the list will be regularly updated. We will keep you informed.

We’ve seen that airline companies are gradually re-establishing their flight schedules from and to Greece and other popular summer destinations in Europe. As of June 15th, visitors will be able to land ONLY at Eleftherios Venizelos International Airport in Athens. As of July 1st, visitors will be able to fly directly to any destination in Greece. Therefore, if you’re looking to fly to Mykonos before July 1st, you’ll have to fly to Athens and from there take another domestic flight or the ferry to reach Mykonos. Note that visitors will NOT have to quarantine for 14 days and will NOT have to undergo tests upon arrival or departure.
Things are looking good despite the situation and here in Greece we’re working hard to make this country an even safer destination that it already is.

SPANAKOPITA

Ingredients:
500 g (1 lb) spinach, de-stalked, washed and chopped
150 g (5 oz) feta cheese
150 g (5 oz) chopped white onion, e.g. spring onions (scallions)
1 egg, beaten
1 tbsp chopped parsley
½ tsp chopped dill
4 sheets of phyllo (filo) pastry
Olive oil

Instructions:
Blanch the spinach for 2 minutes with 50 ml (3 tbsp) of boiling water. Drain, refresh with cold water, and allow to drain.
Squeeze the excess water from the spinach by pressing it firmly between two plates.
Place the spinach in a large bowl together with the beaten egg, the feta, onions, parsley and dill. Add freshly ground black pepper and mix well.
Brush the base of a 9″ (23 cm) flan dish with olive oil. Add a sheet of phyllo pastry, allowing it to hang over the sides. Brush the sheet on the inside of the dish lightly with olive oil.
Repeat for the remaining 3 sheets of phyllo, being sure to place each one at a different angle.
Add the cheese and spinach mixture and spread evenly.
Fold over the top phyllo sheet and brush lighly with olive oil. Repeat for the remaining phyllo sheets.
Bake in the oven at 190°C for 35 minutes.
Serve warm! (And see if it lasts more than 1 day!)
