Vasilopita (Greek New Year's cake) is a traditional cake or bread usually served at midnight on New Year’s eve to celebrate Saint Vasilios Day (January 1). It is customary to hide a coin inside the cake before baking. The person who finds the coin in their piece of cake is granted luck and a blessed remainder of the New Year. Wherever you may be celebrating, the person living where you’ve come together or baked the Vasilopita must do the honours of cutting it. The first piece is dedicated to Jesus Christ, the second to Virgin Mary, third to Saint Vasilios, and fourth to the poor. The fifth piece is for the home of the person in which you are celebrating, followed by a piece for them, then by order of the eldest to youngest relatives or friends who have gathered together. Traditionally, Vasilopita is made of a variety of doughs, depending on the region and almost every family has it's own recipe. The most popular Vasilopita recipes are either made with tsoureki dough or like a cake. However you prefer it, the Vasilopita is an integral part of the Greek tradition and the cutting is a moment that unites family and friends for the New Year!

Ingredients

For the Cake:
300 g butter, at room temperature (+ extra for greasing)
250 g icing sugar
1 tablespoon granulated sugar
7 g mahlab (optional, for aroma)
2 g mastic (optional, finely ground)
1/2 teaspoon ground nutmeg
400 g all-purpose flour (+ extra for dusting)
Zest of 1-2 oranges
1 1/2 teaspoons vanilla extract
4 medium eggs, separated (at room temperature)
75 g whole milk
1 tablespoon baking powder

For Decoration:
Icing sugar, for dusting
Edible Christmas sugar decorations
Instructions

1. Preheat the Oven:
Preheat your oven to 180°C (350°F) with the fan setting on.
2. Prepare the Butter Mixture:
In a mixer, beat the butter and icing sugar for 2-3 minutes until fluffy.
Scrape down the sides and continue beating for another 5 minutes until light and creamy.
3. Add Aromatics and Spices:
In a small blender, mix the granulated sugar, mahlab, mastic, nutmeg, and 2 tablespoons of flour until finely powdered.
Add this mixture to the butter and sugar, followed by the orange zest and vanilla extract.
4. Incorporate Yolks and Milk:
Add the egg yolks one by one, beating well after each addition.
Remove the bowl from the mixer, add the milk, and gently fold it in with a spatula.
5. Mix Dry Ingredients:
In a separate bowl, combine the remaining flour and baking powder.
Gradually fold it into the wet mixture until just combined.
6. Prepare the
In a clean, grease-free bowl, whisk the egg whites with a pinch of salt until stiff peaks form, creating a meringue.

7. Fold in the Meringue:

Gently fold the meringue into the cake batter in three additions using a spatula, making sure not to deflate the mixture.

8. Prepare the Cake Pan:

Grease a 25 cm round springform pan with butter and dust it with flour.

Pour the batter into the pan and spread it evenly with a spatula.

9. Hide the Coin:

Wrap a coin in foil and place it randomly into the batter.

10. Bake the Cake:

Bake on the top oven rack for 45 minutes, or until a toothpick inserted in the centre comes out clean.

11. Cool and Decorate:

Allow the cake to cool completely before removing it from the pan.

Dust with icing sugar and decorate with Christmas decorations.

The salt mines of Alykes Lefkimis in Corfu hold a significant historical and ecological value. Situated in the southern part of the island near Lefkimi, these mines were once a vital part of Corfu's economy, producing large quantities of salt for both local use and export.

Historical Significance

The salt pans date back to the Venetian period (1386–1797), when the Venetians exploited the area's natural resources to sustain their maritime empire. The flat coastal terrain of Alykes and its proximity to the sea made it an ideal location for salt production. The Venetians introduced advanced techniques for harvesting and storing salt, transforming Alykes into one of Corfu's most important salt-producing areas.

The Salt-Making Process

Salt production at Alykes involved a traditional method of evaporation. Sea water was channeled into shallow ponds, where it was left to evaporate under the sun, leaving behind layers of salt. Workers would then manually collect and process the salt, a labor-intensive task that contributed to the local economy for centuries.

Decline and Preservation

By the mid-20th century, industrialization and changes in salt production methods led to the decline of the Alykes salt mines. Production ceased entirely in the late 20th century. Today, the area remains a site of historical and cultural interest, though its industrial use has faded.

Ecological Importance

The Alykes Lefkimis region has evolved into a vital ecological habitat. The abandoned salt pans now attract various species of migratory birds, including flamingos and herons, making it a popular destination for birdwatchers and nature enthusiasts. The area's unique landscape, characterized by its shallow salt ponds and marshlands, supports a diverse range of flora and fauna.

Tourism and Cultural Value

Although no longer active, the salt mines at Alykes Lefkimis are a fascinating historical site for visitors interested in Corfu's past. Efforts have been made to preserve the area, highlighting its dual role as an industrial heritage site and a natural sanctuary. Visitors can explore the scenic surroundings and learn about the traditional salt-making process.
