Pure Monday for the Orthodox Church begins on Holy Monday, while at the same time it means the end of Carnival. Shrove Monday was so named because Christians are "cleansed" spiritually and physically. It is a day of fasting but also a day of rest for Christians. The fast lasts for 40 days, which were the same as the days of Christ's fast in the desert. It is celebrated 48 days before the Sunday of the Resurrection of Christ, the Christian Easter.

The day of Shrove Monday is intensely celebrated throughout Greece, with various customs and is an official holiday. It is common all over Greece to eat lagana, ie unleavened bread prepared only that day, taramas, halva, seafood, vegetables, olives and bean soup without oil. The main customs throughout Greece are the kite flying, but also the so-called Gaitanaki, a custom brought by the refugees from Asia Minor.

On the road to the village of Spili in the prefecture of Rethymno, you will find the seaside settlement of Agios Pavlos, located almost 60 km south of Rethymnon and west of Agia Galini.

Hidden in a protected bay, suitable for a quiet vacation, is the settlement of Agios Pavlos.
