Did you know that Nykteri is the traditional white wine of Santorini, which is produced from very ripen grapes of Assyrtiko and aged in oak barrels?
Its designation comes from its traditional winemaking process. In the past, the harvest took place during the day and then, the stomping of the grapes during the night. In Greek, the word “night” is translated to “nykta” and therefore the name “nykteri”.
The purpose of that procedure was the protection of the must from oxidation since the temperature is lower and the light limited during nighttime. The harvest is manual. The grapes are collected in crates, never completely filled, to avoid broken berries.
They immediately go to the facilities of the winery where they are placed in special cooling chambers, at a temperature of 10 ºC, in order to avoid any oxidation and to protect the aromatic potential of the Assyrtiko variety.
Only the free run juice is taken, with natural flow, without any mechanical pressure but only by the weight of the grapes. In this way, the bitter and astringent substances of the marcs are avoided. The alcoholic fermentation takes place in the stainless steel tanks, under controlled temperature at 17ºC. 1-2 days before the end of the fermentation the wine is placed into 3rd used French oak barrels.
In order to maintain the quality of the wine, the aging in barrels takes place in the underground canavas (cellar) where stable and controlled temperature conditions (15 -16 οC) and humidity (70 -80%) are strictly monitored. The wine remains into the barrels for 6 months, with its lees, before bottling.

When walking through , check out a classical Greek church with typical church bells that is easy to access and even easier to photograph. It is located right next to a playground and you can easily walk right up to it and take a typical Santorini-style church photo.

Did you know that Santorini cultivates nine indigenous grape varieties, including the famous Assyrtiko?

Traces of this dry white wine were found in a prehistoric village excavated at Akrotiri, buried under the volcanic eruption that once sank half the island.
But what is particularly unique and not widely known about it is the vinification process; how the vines form a basket with the grapes growing in the center so as to protect them from the harsh Aegean winds.

When you book your next vacation to , please leave donkey rides and other cruel animal experiences off your itinerary.

If you’re asked to participate in an activity that profits from animal abuse during a vacation, please tell the organizers that you refuse to take part because no one deserves to suffer for entertainment.
Also, ask them to stop offering such activities in the future. Please help keep the pressure on the Greek government to do right by the animals and stop permitting abusive donkey and mule “taxi” rides on Santorini.

Santorini is an entirely different place during the cooler half of the year compared to the warmer months. Beachfront tavernas and most other tourist businesses are closed. Ferry schedules are sparse and local transport is mostly DIY.
