Coming here from the city with the vastest culinary diversity in the world, Toronto.... I often miss the availability of having something "Different" to eat.
Well, enter Ellen's Place. A new Vietnames/ Philippino restaurant in the Pirate's Den hotel in Sandy Bay.
The new owners cleaned up the hotel and the restaurant extensively and it is lovely and quaint.
We ordered the spring rolls as a starter followed by the rice noodles with chicken, shrimp and the stir fried vegetables.
The spring rolls were very nice and a pleasant surprise.
The rice noodle dish too was better that I thought it would be and the stir fried vegetables rounded off the meal nicely.
I must admit, it wasn't the b est food of this type I have ever eaten, but considering the lack of availability of the correct engredients, they did very well.
It beats the hell out of the other oriental food options on the island.
I would definitely go back again.

GUANAJA
Columbus discovered this island in 1502 and called it Isla de Los Pinos (Isle of Pines) although it already had a name, Guanaca, used by the natives that inhabited it. This name appears as early as 1511 on a map drawn by Peter Martyr but it later was corrupted by English pirates, privateers and settlers and was pronounced Bonacca. It is completely surrounded by the Mesoamerican reef system, second in size only to the famous Australian Great Barrier Reef system, which provides untouched reef for wonderful diving and snorkeling and extensive flats for fly fishing. Much of the island is also surrounded with swampland, so the bird life here is extensive and becoming very popular with “birders.The island population is about 10,000, with the majority living on Bonacca, a small cay just off the south shore of the island. This densely populated cay has been described as the Venice of Honduras because of the waterways that run through it. Guanaja was settled by descendants of British families that matriculated through the Cayman Islands, and the first language is English. COPAN Fly along the Guatemala coast toward Copan, passing over Tela and San Pedro Sula landing near the beautiful town of Copan and the National Historic Site of Copan Ruins. Discovered in 1570 by Diego García de Palacio. The ruins of Copán are one of the most important sites of the Mayan civilization, they were not excavated until the 19th century. The ruined citadel and imposing public squares reveal the three main stages of development before the city was abandoned in the early 10th century.
