Delicious sweet cottage cheese balls 🙂
Ingredients
For the dough:
500g cottage cheese
1 teaspoon vanilla sugar
2 eggs
1 pinch of salt
Zest of 1 lemon
100g sugar
140g semolina
For the ’skin’:
50g butter
250g breadcrumbs
For the finishing:
3 teaspoons icing sugar
400g sour cream
Cinnamon
Steps
In a mixing bowl, crush the cottage cheese with a fork.
Add the eggs, vanilla, icing sugar and lemon zest, and a little salt, mix it
Add the semolina
Stir until it forms a smooth dough
Cover the mix with a foil and put it in the fridge for 1 hour
Shape the dough into small balls
Boil water, add a little salt, cook the balls for 3-4 minutes
In a pan, melt the butter and add the breadcrumbs, stirring until brown
Roll the balls in the breadcrumbs then serve with sour cream mixed with icing sugar and cinnamon
ps.
Some prefer to initially add only the yolks to the dough, and later the whipped egg-white so as to get a lighter consistentency
