A few images of the construction of the MV Goldsmith, now Shannon Princess II, circa 1996-1998. The vessel was built in Lakeside Marina, Ballykeeran by Michael Barrett and family. She was built originally as a 200 pax day passenger boat and converted to a 10 pax luxury hotel barge in the same yard in 2003.

It's inspired by a very tragic medieval Danish ballad, which tells the story of Hellelil, who fell in love with her personal guard Hildebrand. Her father disapproved of the relationship and ordered her seven brothers to kill him. St. Patrick’s Day Barge Made Cream Liqueur
Ingredients

300g homemade dulce de leche
1 shot of ristretto coffee
100ml bitter chocolate at least 70%
1 tsp vanilla seeds
300ml Irish whiskey
1 Can condensed milk
150ml double cream
How to…

Over a gentle heat in a saucepan – infuse the vanilla into the double cream.

Remove the saucepan from the heat at just under boiling point.

Now add the chocolate, ristretto and the dulce de leche stirring until melted, and the mixture is velvety smooth.

Stir in the condensed milk and lastly the whiskey.

Pour into 1 large or several smaller sterilised bottles. This will keep in the fridge for a few weeks.

Enjoy over crushed ice or over oatmeal!.
