We all have our own little worries or issues that we’re a bit afraid of encountering on vacation eg heights, maybe some health issue, ability to get medicine, special food requirements, what clothes to pack, mobility issues, before and after tour transport/accommodation and others. Or maybe you would prefer to do a different sort of vacation 🤔 Maybe you want to honeymoon in Ireland! Or get married here! Organise larger family groups? Where’s your favourite 🤔 The Red Fox at The Kerry Bog Village? 💚🇮🇪

As Irish success stories go, the success of Irish Chef Joe Sheridan is one that will stay with everyone forevermore. Despite the fact that his creativity has made an impact on social lives for nearly 80 years, very little is known about Joe Sheridan. All we know for a fact is that he was born in Castlederg, County Tyrone in 1909 and that he was an accomplished Chef and bartender.

In the early 1940’s he applied for the job as head Chef in the restaurant of the Flying Boat Terminal at Foynes Port near Limerick. Legend has it that when he applied for the job he simply wrote “Dear Sir, I’m the man for the job. Yours sincerely, Joe Sheridan”.. He got the job…

One night in 1943 a flying boat was heading out towards New York from Foynes Port but bad weather conditions forced the pilot to return to Foynes. Although off duty, Chef Sheridan was asked to come back to the airport and prepare something to warm the passengers up. He entered the kitchen and prepared coffees that each had a measure of good Irish Whiskey and topped it with his own pouring cream.

The drinks proved a huge success and in the course of the evening one American passenger asked of Joe “Is this Brazilian coffee?” to which Joe replied “No Sir!..This is Irish Coffee!”. And from there tales of the recipe were taken to the USA and around the world.

Irish Coffee was introduced to America by a travel writer called Stanton Delaplane who asked Jack Koeppler the owner of the Buena Vista Hotel in San Francisco to try and re-create the drink. Try as he might he just could not perfect it, in particular the special way the cream settled on the top. Not surprisingly, within a year Joe Sheridan was working at that very hotel in America where his special Irish Coffee was a huge success.

We do know that Joe Sheridan worked at the Buena Vista Hotel for at least 10 years, and we can only hope that he retired comfortably on his success. What is also known without question is that his Irish Coffee invention is still served 2,000 times a day at the Buena Vista Hotel and is also loved and enjoyed worldwide. Restaurants, bars, in every country in the world serve Irish Coffee and it is the staple end to every Irish family celebration. With New Year's Eve coming tomorrow no doubt millions of glasses of Irish Coffee will be raised in celebration around the world.
