Is it too early to say the 'C' word? 🎄

We're already starting to feel festive here at The Little Mill, which is why we've baked these indulgent Cranberry and Walnut Brownies using our Brownie Mix for a quick sweet treat as we start thinking about the Christmas decs!

If you're planning to entertain friends and family, or just fancy treating yourself, why not try this homemade Irish soda bread recipe, topped with melt-in-the-mouth smoked salmon, a splash of fresh lemon juice and finished with cracked pepper?

Using our Irish Soda Bread Mix, you can bake a fresh loaf in just over half an hour. Find us in selected Dunnes Stores.

You will need: 1 wooden spoon or spatula, a bowl to mix in, a knife, a 2Lb home baking tin, 430 ml of full fat milk and an oven.

Turn the oven on to 200C (fan assisted electric oven) gas mark 6 or moderately hot. And lightly grease your 2Lb tin.

MIX:
Pour the contents of the premix bag (450g) into your mixing bowl and add the milk. Using the wooden spoon mix gently until you form a smooth wet dough.

TIN:
Spoon the dough into the greased baking tin. Lightly press the dough into the corners with your fingers. To help the dough rise, using a wet knife cut the dough lengthways down the centre of the dough about 1’’/ 3cm deep.

BAKE:
Place in your preheated oven straight away and bake for 35-40 minutes. When the bread is baked an inserted skewer should come out clean. Turn onto a wire cooling tray and allow to cool before serving.

TOP:
With smoked salmon and finish with a splash of fresh lemon juice and some cracked pepper.

There's nothing more comforting than the smell of freshly baked soda bread, especially as the nights draw in and the air gets a little crisper.

Our easy-to-use Irish Soda Bread Mix allows you to prepare a loaf in just five minutes. And for an extra warming kick, we've added a sprinkling of mixed spice and some dried fruit - find the recipe below if you'd like to give it a go.

Our Irish Soda Bread Mix can be found in SuperValu Ireland Stores nationwide.

Prep: 5 minutes
Cook: 35-40 minutes
Makes: One loaf

Ingredients:
The Little Mill Irish Soda Bread Mix
1 tsp mixed spice
¼ tsp ground nutmeg
100g dried mixed fruit
1 tbsp honey
430ml/14.5 fl. oz. of milk

Method:
Turn your oven on to 165°C/325°F/Gas mark 3 and lightly grease your 2lb/900g loaf tin with butter.

Empty the contents of the packet into your mixing bowl. Add the mixed spice, ground nutmeg, dried mixed fruit, honey and then milk. Using a wooden spoon, gently mix together until you form a smooth wet dough.

Spoon the dough into the greased baking tin. Lightly press the dough into the corners using your fingers. To help the bread rise, use a wet knife to cut a line lengthways down the centre of the dough approx. 1”/3cm deep.

Place the tin into your preheated oven straight away and bake for 35-40 minutes. When the bread is fully baked an inserted skewer should come out clean. Turn out onto a wire rack and allow to cool before serving.

Nothing tastes better than warm, buttery homemade shortbread.

In less than 30 minutes you can prepare and bake some delicious, crunchy wholemeal shortbread biscuits using our traditionally milled Plain Wholemeal Flour.

Now, who to share them with...?

Prep: 10 minutes plus chilling
Cook: 12-15 minutes
Makes: 30

Ingredients:
200g butter
100g caster sugar
200g Plain Wholemeal Flour
100g plain flour

Preheat the oven to 180oC, gas mark 4. Line 2-3 baking trays with baking parchment.

Slowly beat together butter and sugar until pale in colour. Add both flours and mix until a dough is formed. Place on a sheet of cling film and roll into a cylinder 5cm in width.

Place in the fridge until firm. Slice into 1/2 cm discs, place on the trays and bake for 12-15 minutes.

You won't want to miss these scrumptious Cheese Scones using our Scone Mix - an easy and quick way to whip up a baked treat - for the tantalising aroma, as well as the taste!

Follow the recipe below to make 10 cheesy scones in just under 20 minutes that can be served with soups or frozen for a later date. 😊

Prep: 5 minutes
Cook: 12-13 minutes
Makes: 10 Scones

Ingredients
✅The Little Mill White Scone Mix
✅175ml/6fl. oz. of milk
✅50g/2oz of soft butter
✅125g grated mature cheddar cheese
✅1 tsp English mustard

Method
1️⃣To get started turn your oven on to 180°C/350°F/Gas mark 4 and lightly flour your baking tray.

2️⃣Empty the contents of the Scone Baking Mix into your mixing bowl and gently rub in the butter with your fingers, followed by 100g of the grated mature cheddar cheese.

3️⃣Mix the English mustard into the milk and add to the mixture. Mix with a wooden spoon until a stiff dough has formed.

4️⃣Remove from the bowl onto a lightly floured work surface and gently knead into a soft ball. Allow dough to rest for 2 minutes.

5️⃣Lightly flour your work surface again. Using your rolling pin, roll out the dough until approx. 1”/2cm thick. Use a scone cutter to cut out scones and place each one on a floured baking tray. Press trimmings together and repeat the process until all the dough has been used up.

6️⃣Brush the top of the scones with milk using a pastry brush and top with the remaining 25g grated cheese.

7️⃣Place into your preheated oven for 12-13 minutes or until golden brown. Remove from the oven and allow to cool.

8️⃣Serve with butter.

As much as we love an elaborate and indulgent bake, sometimes you can't beat a simple classic, like this carrot cake.

Delicious, moist and with a generous spread of cream cheese frosting… we've left ours plain, but you can scatter some walnuts on top for an added crunch.

Ingredients
✅300g caster sugar
✅215g rapeseed oil
✅2 medium eggs
✅375g carrots, grated
✅200g Plain Wholemeal flour
✅70g Plain flour
✅1½ tsp baking powder
✅1 tsp ground nutmeg

For the icing:

✅50g butter
✅75g icing sugar
✅180g cream cheese
✅1 lemon, zest and juice

Method
1️⃣Preheat the oven to 200oC, gas mark 6. Grease and line the base and sides of an 18cm round cake tin with baking parchment.

2️⃣Tip the sugar into a large mixing bowl, pour in the oil and add the eggs. Lightly mix with a wooden spoon. Stir in the grated carrots.

3️⃣Mix both the flours, baking powder and nutmeg together then lightly mix into the wet mixture until everything is evenly distributed. The mixture will be fairly soft and almost runny.

4️⃣Pour the mixture into the prepared tin and bake for 50-60 minutes, until it feels firm and springy when you press it in the centre. Cool in the tin for 5 minutes, then turn it out, peel off the paper and cool on a wire rack. (You can freeze the cake at this point.)

5️⃣For the icing, melt the butter and allow to cool slightly. Mix together the sugar and cheese then fold in the cooled butter, lemon zest and juice.

6️⃣Slice the cake in half horizontally, sandwich with half the icing and cover the top with the other half.

We work with local farmers that harvest wheat for your bakes right here in Kilkenny. Once harvested, the wheat is passed onto us, where we traditionally mill it and produce a range of unique flours.

Looking for activities to do with the kids this summer? Try these wholemeal shortbread biscuits that are really simple. You can have fun cutting them into different shapes and you can all add your own favourite ingredients, like raisins, chocolate chips, nuts or all three.

Ingredients

You can never tire of a classic carrot cake but we couldn't resist adding our own Little Mill touch, with our signature plain wholemeal flour, grown locally, near our mill here in Kilkenny.

We've popped the recipe below, so you can try it for yourself😋

Find our plain wholemeal flour in select Dunnes stores.

Ingredients
✅300g caster sugar
✅215g rapeseed oil
✅2 medium eggs
✅375g carrots, grated
