๐ŸŒฑ We are thrilled that Eoin Cluskey, Co-founder of Bread 41 - will speak us at our upcoming Inspiring Sustainable Tourism Conference on 23 January 2025! ๐ŸŽ‰

Bread 41, a well-known bakery in Dublin recognised for its high-quality sourdough breads and pastries - and its commitment to sustainability. Bread 41 is celebrated for its use of traditional methods, including slow fermentation and sourdough techniques, using only three ingredients organic flour, water and salt. It is also committed to working closer with Irish farmers moving forward to procure more organic Irish grains.

With Eoin at the helm, Bread 41 also focuses on environmentally friendly initiatives. The bakeries run using renewable energy, and high-performance, low-energy ovens have been installed to further reduce energy consumption. Single-use coffee cups have been removed and other measures include considerable bin reduction, operating a biodigester, removing baking paper and many more initiatives. Eoin points out that, in the main any decision that has been taken to improve our environmental footprint has also saved the business considerable amounts of money.

Bread 41 also focusses on positive social impact practices in its operations. It is currently setting up a 'Love Bread' education programme to teach people, schools and children about the nutritional values of Real Bread, its cultural history and ingredients.

Bread 41 is B Corp certified.

It's a good job that Eoin gave up his one-time career as a carpenter to pursue his love for creating exceptional bread.

He is a Social Entrepreneurs Ireland Awardee and has sat on, and advised, many government consultative and policy committees on disability rights and inclusion, which have helped shape national policies for a more inclusive society.

Adamโ€™s work has positioned AsIAm as a cornerstone of autism advocacy in Ireland, driven by his belief that Ireland must become a country in which every Autistic person is accepted โ€˜as they areโ€™ โ€“ equal, valued and respected.

Today, our Sustainable Tourism Network consultant Rebecca Toomey collaborated with the staff at Kylemore Abbey for an engaging, full-day training session focused on sustainable tourism and reducing energy use at Kylemore Abbey.

Through interactive presentations, the Kylemore crew explored practical ways to reduce resource consumption โ€”at home and in their daily work here at the Abbey.

A key focus of the day was identifying actionable steps to manage energy use across their operations, ensuring they play their part in building a more sustainable future. ๐ŸŒ

Burren Beo Trust is a charity which aims to connect people to their places and their role in caring for them. Focusing on the wellbeing of people and place, Burrenbeoโ€™s work includes monthly walks and talks, conservation volunteering, festivals like Burren in Bloom and Burren Winterage, education projects like Heritage Keepers and hands-on nature restoration initiatives, such as The Hareโ€™s Corner.

Brendan is also a founder of Farming for Nature and ReFarm which aim to acknowledge, celebrate and support farmers across Ireland and Europe who work to protect nature.

Based in Co Clare, Brendan was Manager of the Burren Programme (2010-23) which employed an innovative, results-based payment system to incentivise Burren farmers to improve local biodiversity, water quality and landscape, delivering consistent social, economic and environmental gains. The programme also garnered national and international accolades during its lifetime.

๐ŸŒฑ We are thrilled that Fiona McKenna - Co Clare's Sustainable Destination Development Officer - will join us at our upcoming Inspiring Sustainable Tourism Conference on 23 January 2025! ๐ŸŽ‰

Fiona's role with the local authority of Co Clare is the first of its kind in Ireland. Fiona is focused on achieving a sustainable destination certification for Co Clare in line with Clareโ€™s Tourism Strategy 2030.

Fiona holds a PhD in Sustainable Tourism Destination Management from the Atlantic Technological University, Sligo. Her PhD looked at Sustainable Tourism Indicator Systems and her research centres on supporting tourism destinations by collecting baseline data on indicators to monitor the impacts of tourism and develop strategies to address sustainability challenges, including climate change mitigation.

Fiona also holds a BSc in Biology from Hawaii Pacific University (HPU) and a Masters in Environmental Sustainability from University College Dublin (UCD). Fiona is invested in developing strategies that create more sustainable practices within tourism that respect and collaborate with local communities, preserve cultural heritage, and protect natural environments.

๐ŸŒŸ We are thrilled to announce that Hometree's Ray ร“ Foghlรบ will be joining us as a contributor at our Inspiring Sustainable Tourism Conference on 23 January 2025! ๐ŸŽ‰

Ray is the development lead at nature restoration charity Hometree which is based in Ennistymon, Co Clare.

What began as a tree-planting charity grew into a project that endeavours to deeply connect people with nature, and facilitates a wide variety of fundamental projects to address both Irelandโ€™s declining biodiversity and the unfolding climate challenge.

Ray runs the charityโ€™s farm programmes, such as Illaun FarmForest EIP, as well as their cultural projects, including Dinnseanchas & Ardnaculla Summer School.

His background is in environmental science where he specialised in forestry policy and practise. Rayโ€™s areas of interest are forest ecology, native woodland restoration, farm woodland integration, and the role of culture in change. He is a 2021 Nuffield scholar, where he looked into the barriers to afforestation.

We can't wait to learn from Ray in January.

๐ŸŒฑ We are delighted to announce that this year's Inspiring Sustainable Tourism Conference will be supported by Visit Clare and The Burren and Cliffs of Moher UNESCO Global Geopark through Clare County Council. ๐ŸŽ‰

๐ŸŒ Within its ambitious 2030 Tourism Strategy, County Clare is committed to becoming a โ€˜globally recognised, sustainable and vibrant destinationโ€™.

To support this, Clare County Council and Clare Tourism Development are actively working toward achieving a sustainable destination certification, building on Clareโ€™s historical leadership in sustainable tourism within the Burren and Cliffs of Moher UNESCO Global Geopark.

Key actions include establishing baseline indicators, hiring a Sustainable Destination Development Officer, conducting a Destination Risk Assessment, and creating a Sustainable Destination Action Plan.

Additionally, the County Clare Destination Green Team has been established and includes local authority members, tourism agencies, businesses, conservation agencies and community representatives. It also includes partnerships with the UN Tourism INSTO Network and Atlantic Technological University (ATU). ๐ŸŒ

๐ŸŒณ๐ŸŒฑ Had an amazing time at Powerscourt Estate's Wonder of Trees event last weekend! ๐ŸŒฟโœจ Wandering through the stunning gardens with head gardener Alex Slazenger was truly an experience to remember. From towering redwoods and monkey puzzles to ancient weeping holly ๐ŸŒณ, we were in awe of the biodiversity and beauty.

We also learned about the innovative work being done to explore climate matching ๐ŸŒ - ensuring the garden thrives for generations to come - by planting species that will cope with hotter, drier conditions.

Alex reckons that our future climate could be more like southern England, with warmer and more drought-prone conditions, which means species from places like Chile may flourish here in the long run! ๐Ÿ‡จ๐Ÿ‡ฑ๐ŸŒž

Other inspiring initiatives on the estate focus on supporting native plants ๐ŸŒธ and attracting pollinators ๐Ÿฆ‹ while reducing the use of pesticides and fungicides. Itโ€™s all part of Powerscourtโ€™s mission to protect and nurture nature for the future. ๐Ÿ’š๐ŸŒ
