Israel is blessed with varied geography in a small area much of which is only accessible when you leave the roads behind. We offer hiking, mountain bike and off-road tours throughout Israel at every level from beginners to challenging! Israel's wine industry has undergone a revolution, with at first a handful and now many more wineries producing world class wines from the late 1980's. We've been b

lessed with the opportunity of growing up with the wineries, having personal connections with top winemakers and other in this delightful industry. We can plan and take you on special wine tours with access to people and places not available to the average tourist. Not too long ago if you wanted to eat good food in Israel you went to a Middle Eastern restaurant and had grilled meats and humus, cheeses were white and young, handmade bread was pita. Then a new cuisine arrived which I like to call Mediterranean Fusion which combines fresh local ingredients and different cooking traditions from France, Italy, North Africa and the Far East. Many talented cheese-makers led now make hand-crafted aged cheeses from goat and sheep milk. Artesian bakers are make breads from whole grains and fine chocolates are produced all over the country. Our culinary tours include dining on great foods in top restaurants as well as little "holes in the wall", market tours and can integrate cooking lessons and workshops with leading chefs.

Galil Mountain Yiron Rosé 2022. A blend of Syrah, Grenache and Barbara. Floral and citrus aromas. Red grapefruit and stone fruit in the mouth with high acidity and a long finish. A great refreshing summer wine!

Ramat Negev Exodus 2018. The first Israeli wine to receive a score of 97 from Decanter! Will open one bottle either on my upcoming anniversary or birthday.

Mika Riesling 2023. Made from grapes sourced in the Upper Galilee. An elegant wine, with crisp acidity, peach and apricot and a hint of petrol that will become more pronounced as the wine ages. Nice velvety texture and medium body. 12.7% ABV. While I’ve met Mika Mandel, the winemaker, at various events, this is the first of her wines that I’ve had the pleasure to drink. I look forward to drinking the rest of the wines that she makes in her small family winery located in the Golan Heights. .winery

Vitkin Winery Old Vines Carignan 2020. Made from grapes in the area of Zichron Yaakov and Binyamina. I confess, I really like Carignan varietal wines, this grape does well in the Israeli Mediterranean climate. Made by winemaker Assaf Paz, who was the first winemaker in Israel to constantly produce quality wines from Carignan grapes. Dark red fruit, black pepper, sage and coffee. High acidity and tannins. Long aftertaste. A pleasure. You have to like the photo with the setting sun in the background.

Ahat Chenin Blanc 2021. I want this wine in a blind tasting! The varietal aroma of petrol is pleasantly predominant with white flowers and green apple. The wine was fermented in stainless steel and French oak, the later imparting nice body to the wine and a velvety feeling in the mouth. Complex but subtle flavors of honey and white fruit along with the petrol. Made from grapes grown in Kfar Shamai in the upper Galilee. Hats off to winemaker Nitzan Zwersky for a pleasurable wine!

Pelter Sauvignon Blanc 2023. Aromas of guava grapefruit. Tropical fruit, citrus and flinty mineral in the mouth. Fresh crispy acidity and only 10.5% ABV, indicative of an earlier harvest in this hot climate. A great Israeli expression of the SB variety with grapes from the Upper Galilee and the Golan Heights.

Tura Estate Winery Sauvignon Blanc 2023. Unoaked, aromas of guava and grapefruit. High acidity, grapefruit and herbs on the palate. Wonderful long finish. .winery

Pinto Winery Chardonnay 2023. A great manifestation of unbaked Chardonnay from the Negev desert. Aromatic with lime and apple, crisp acidity and a long finish.

Yaffo Winery Sauvage Carignan Judean Hills 2022. Aromas of plums and vanilla with a touch of mint. On the palate , plums, mint and dark cherries. Medium-High acidity and smooth tannins. Was a great accomplishment to tonight’s steaks.

Nana Estate Winery Chen Blanc 2022. A wonderful wine produced from grapes grown in the Central Negev Highlands. Aromas of pear and lime, with prominent mineralty and crisp high acidity. This was a perfect match to our sushi dinner.

I’m celebrating International Riesling Day (March 13) with Shiran Winery Riesling 2020. Floral and peach aromas, in the mouth I feel apricot and petrol. Great crisp acidity!

Yaakov Oryah “ A Dream of Espamia” 2021. A blend is Tempranillo (85%), Carignan (12%) and Grenache (3%). Yaakov Oryah is a wine magician and this is his homage to Rioja. Medium body, dark cherries, leather and chewy tannins. Looking forward to drinking this with tonight’s ribeye steak.

Pinto Winery Malbec 2022. The first harvest in the Nshal Shualim (Foxes Wadi - hence the fox on the label) vineyard near Yerucham in the Negev Desert. Was great with the steaks, plums, minerality and chocolate.

Jerusalem Vineyard Winery R.Blnd 2021. A Mediterranean blend of Carignan and Marselan. Fresh raspberries and dark cherries, sage, a hint of licorice and spices. Full body, crisp acidity and prominent tannins that ensure that this wine will improve with age. Great VFM at about $17 a bottle (in Israel)

Yatir Winery Gar Amasa Rosé 2021. A blend of Grenache (70%) and Mourvèdre (30%}. Salmon pink. Aromatic with red fruit, peach and red grapefruit on the nose. In@the mouth- peach , strawberries, cherries, red grapefruit along with minerality. Nice crisp acidity and a long finish.

Agur Winery Rosé 2022. An amazing wine, I don’t know where to begin. First of all medium body in a rosé - wow. Stone fruit and red grapefruit with floral aromas. Distinct minerality that is probably an expression of terroir since we encounter this consistently in Agur rosés. Stone fruit and red grapefruit. A perfect wine for summer in Israel!

Ramat Negev Ramon Malbec 2020 is the wine that will bless our second festive meal for the holiday of Shavuot. This bold dry red wine will be a great pairing with the hamburgers that we’ll grill tomorrow. Made from grapes sourced in a vineyard near Mitzpe Ramon in the Central Negev Highlands at an altitude of almost 1000 meters above sea level.We need to open this bottle ahead of time to give it time to open and breath. With 13% ABV, this is a low-alcohol red wine for a hot climate country.

Made by a magical winemaker, Yaakov Oryah this white wine - מלכת הלבבות -QUEEN OF HEARTS 2021 is a blend of: Chardonnay (37%) | Chenin
Blanc (37%) | Sémillon (14%)
Gewurztraminer (12%). It is traditional that the fist festive meal of Shavuot is based on milk products, this white wine will be a perfect accompaniment to tonight’s pizzas and cheese cake desert.

Dalton Winery Majestic Old Vine Carignan 2031. From vineyard in Kfar Tavor, Lower Galilee. Dark cherries, spices, herbs and chocolate. Unfortunately this wine is not available I. Stores, part of a series usually only sold to restaurants in Israël. Great acidity and medium finish. Yummy!

Ramot Naftaly Petit Verdot 2019. Petit Verdot is a Bordeaux blend usually used in small percentages in Bordeaux because it is a late ripening variety that. In Israel Petit Verdot is used as a varietal as we are blessed with enough sunshine and heat to ensure ripening. This wine from the Kadesh Valley in the Upper Galilee is an elegant expression of the variety. Full bodied with a velvety texture in the mouth, plums and berries with plenty of spice - cloves and pepper. Lots of gentle tannins with enough acidity to ensure many years of potential aging. With a long finish. “

Sphera Winery Lia Blanc de Blancs 2018. A wonderful sparkling wine made in the méthode champenoise. Wonderful citrus, mineral and that hazelnut in the mouth. Although we can’t call it Champagne, many Champagnes would like to be this good. The sexy photo is the still wine laid down for the second fermentation back in 2019. I feel privileged to have tasted this as a still wine. I bought two bottles from this limited 900 bottle vintage. I hope that I can wait after years before opening the second bottle.

Tabor Winery Viognier Shifon Single Vineyard 2017. A dry white wine made from grapes grown at an altitude of 950 meters in the Golan Heights. Aged sur lies for eight months in French oak. Wonderful floral aromas, with stone fruit and honeysuckle. No surprises in the mouth, peach and apricot, medium body with a velvety texture and crisp acidity. A long finish and feels like less than the 13.5% ABV. .michal
