Hawaij, is a variety of Yemeni ground spice mixtures used primarily for soups and Yemeni coffee.
The basic mixture for soup is also used in stews, curry-style dishes, rice and vegetable dishes, and even as a barbecue rub. It is made from cumin, black pepper, turmeric and cardamom. More elaborate versions may include ground cloves, caraway, nutmeg, saffron, coriander, fenugreek and ground dried onions. The Adeni version is made of cumin, black pepper, cardamom and coriander.
The mixture for coffee is made from aniseeds, fennel seeds, ginger and cardamom. Although it is primarily used in brewing coffee, it is also used in desserts, cakes and slow-cooked meat dishes.
In Aden, the mixture is made with ginger, cardamom, cloves, and cinnamon for black coffee, and when used for tea excludes the ginger.
In Israel, hawaij is used extensively by Yemenite Jews and its use has spread more widely into Israeli cuisine as a result.

Do you know Zaatar?
Zaatar is a middle eastern spice used in every aspect of the local cuisine. Made of a mix of spices (sesame seeds, dried sumac, salt to name a few). it is mostly used on pitas, flat breads, and Lebanese cheese. This is ideal to add some flavor to your salads. My personal tip? Mix it with butter or oil to season your bbq meat! One drop of zaatar in your dish will bring you back to Israel in one bite! Enjoy!

A new day a new adventure! Today with the passengers of the Vista cruise, we conquered the city of Acre. Walking on the crusaders steps, discovered the Ottoman Empire, the British mandate, the stunning view above the Bahrain gardens and obviously without forgetting the Great Napoleon… these are only some of the aspects we discovered today!
My life is an adventure and I’m so glad you are all part of it!

Aujourd’hui avec F***y et Julien nous avons bravé la pluie de Jérusalem pour découvrir cette ville incroyable. Nous avons abordé l’histoire, l’archéologie, les religions la géopolitique la géologies et le tout avec le sourire et bonne humeur!

After a year of successful challenges, life lessons, and discoveries, well I treated myself with a time off in the magnificient NYC. 20 days to (re)discover, rest and fill myself with new energies, to start 2023 the best way possible.

2 great days for the Dreyfus family who came directly from Melbourne. We visited the Holocaust Memorial, Yad Vashem, learning a bit of their personal family history. After that we jumped on a 5000 years old journey through the streets of the old city.
On the second day we discovered the old Jaffa and the landmarks of Neve Tzedek, to understand how the white city, Tel Aviv, has been built.
For me it was a delight, and I guess they enjoyed it as well.
Thank you the Dreyfuses for choosing and for letting me be part of your journey. See you soon here in Israel, and why not, maybe in Australia!

איך להסביר לכם את היום שעברתי היום?
לפני חצי שנה עליה גדולה מאתיופיה הגיעה לארצנו.
ילדים אבודים, וקצת בשוק. אחרי חצי שנה השוק עבר אבל עניים עדיין מבריקות מהסקרנות וההרגשה להיות באדמה הזו.
אני בדרך כלל לא מדריכה ילדים. אבל אני כל כך שמחתי לעבור את היום איתם. נזכרתי את ההתרגשות של הפעמים הראשונות שלי בארץ. את ההתרגשות והרגשות. לראות את זה בעיניים שלהם היה פשוט כבוד. סימן שעשיתי משהו טוב בחיי לזכות לראות ולחוות את זה. תודה לכם.

3 jours de totale découverte pour Florence, sa famille et ses amis... De la modernité historique de Tel Aviv Jaffa, à Jérusalem en passant par le désert de Judée, nous avons marché (beaucoup), mangé (pas mal!) Et ri (énormément !). La religion, l'histoire, la culture, les traditions, nous avons tout abordé, toujours avec curiosité et bonne humeur ! Merci pour m'avoir une nouvelle fois fait confiance et pour ces merveilleux souvenirs ! À bientôt ! ❤️

With the official delegation from Harvard we walked around the neighborhood of Neve Tzedek in Tel Aviv. We learned some history, listened to some stories, all of that with a lots of laughter, smiles and... Dogs! (Isn't it Jerry?!)

Still can't get a selfie properly, but gosh I had a wonderful day. With the Wonderful Ramos family we discovered the amazing fortress of Massada, and after a long walk in the sun, we had a well deserved bathing time at the lowest point on earth, the Dead Sea.
I left them at their cruise ship in Ashdod the heart and soul full of light, smiles and energies.
Gosh. I. LOVE. MY. JOB.

Well after a first wonderful day in the Galilee, I've be honored to guide the delegation of judges from the Annual International Judges Conference in The old city of Jerusalem. We discovered the city of gold, through History, culture, religion, architecture and well... Food!
It was an amazing day with all of you. Thank you m.

A wonderful day with the participants of the annual international Judges Conference that is taking place in Tel Aviv. We visited the Galilee area, walking on Jesus' steps, discovering the architecture from the Roman empire era, learning about Israeli modern history, and even about botanic, hydrology and geology. What a great day with a group of elegant, smiling and interesting people.
