CITRINE DREAM POCKETS
Ingredients:
▪️Chocolate shell
*Semisweet Dark chocolate-50gms
▪️Orange gel
*Orange juice-1/2cup
*Sugar-30gms
*Corn starch-1.5 tbsp
▪️Sabudana pudding
*Mini nylon sabudana-50gm
*Water -200ml
*Sugar-70gm
*Milk-100 ml(as needed to adjust consistency)
*Saffron fronds-For garnish
Procedure:
*Melt the dark chocolate in the oven and pour it into silicone moulds.Keep the moulds in the fridge for the moulds to set.(Be careful not to burn the chocolate)
*Mix together orange juice,sugar and corn starch.Simmer the orange juice mixture over medium high flame until a thick gel like consistency is achieved.Allow to cool and fill the gel in an icing bag.
*Cook the @lotus_sago mini nylon sago in water for 5 minutes until glass like.Later add sugar and milk.Boil for 3 minutes.Finally add saffron fronds.Sago pudding is ready
*Allow the sago pudding to cool down.It should be in a piping consistency.If not reduce the pudding over the flame.Add the cooled tapioca pudding into an icing bag.
*In a clean plate,first pipe out the orange gel followed by tapioca pudding and orange gel again.Garnish with peeled oranges and close with the chocolate shell.
*Break open the shell and enjoy a yummy plated dessert!
