Today's offering from The Casual Gourmet was authentic Mangshor Jhol - the Bengali version of mutton curry.

It was spicy with a hint of sour from the curd added and a dash of sweet. Slow cooked and then steamed, for about 90 mins, made the spices blend uniformly and seep into the evenly cut juicy pieces of the mutton. The aroma was tantalizing.

This was a co-creation of the Chief Creator Puja Mukerjee and yours truly, ably supported by the sous chef, Kasturi.

After a long time I got a chance to completely immerse myself in cooking.
25th was a day full of planning and preparing my version of a family Christmas dinner.
The menu was a composition of one favourite item of everyone in the family so we had
Devilled eggs, baked potato jackers,
Shepherd's pie, lamb chops in rosemary papkrika gravy, cheese garlic babka with caramel and walnut coated cinammon rolls ...
Food followed by fun. A perfect evening where we had thumb wars and arm wrestling 😂😂😂

Christmas Eve was a Saturday so all vegetarian items. Made a cottage cheese stroganoff with chilli glazed lotus stems, sweet potato salad and Greek salad....
For dessert we had flambe fruit cake...

On great demand.... Here is my recipe for
Phulkopi'r shingara (Cauliflower Samosa)
Ingredients:
For the dough
2 cups all-purpose flour
3 tbsp ghee
1/2 TSP Nigella seeds
1 TSP salt
Water as needed
For the filling
150 gm cauliflower cut into 1 cm florets
150 gm potatoes cut in 1 cm cubes and par boiled
2tsp panch phoron (mix of cumin seeds, fennel seeds, Nigella seeds, carom seeds, Fenugreek seeds) this mix is also available on Amazon or any Bengali store
1 tsp coriander powder
2 tsp mango powder
1 tsp rock salt
Salt to taste
Garam masala 1/2 tsp
2 tsp kasuri methi
2 tbsp ginger green chilli paste
1 tsp sugar
3 tbsp peanuts
1 tbsp raisins

Process
Mix the salt, Nigella seeds and ghee in the flour using the shortening method. Add little water and make a stiff dough. Cover it in cling wrap and keep aside for an hour.
In a kadai heat up 3 tbsp of mustard oil. Add panch phoron. When it splutters add the ginger green chilli paste and cook till the rawness is gone. Add the cauliflower, potatoes and salt fry for 2 mins. Then add a little water, cover and cook once the veggies are done add the spices and seasoning and fry well. Add fried peanuts and raisins. Add the sugar and fry again for a min. Allow the filling to cool

Take the dough and divide it in 5 portions. Roll each portion slightly thick and oval. Cut horizontally to divide in 2 semi circles. Do the same for all the dough balls.
Apply water on the edges and bring them together to make a cone. Fill it with the cool filling and apply water on the edges and close the samosas. Make all the samosas and leave them to dry for 30 mins. Heat oil in a kadai and fry the samosas in lukewarm oil in batches. Depending on the size of your kadai you can make 4-10 samosas at a time.. It takes about 30. Once golden brown take them out and serve hot with Tea 😊

Happy Sunday....
Have been baking our own breads for a few months now. Sandwich and regular multi seed loaves.... But have been hankering for a good country loaf for some time. Did quite a bit of reasearch. You won't believe I was dreaming of breads. Finally yesterday started on my dough and this morning
baked my first ever rustic overnight bread.. amazed with the outcome....
Just look at the airy crumbs.

Finally it's baked and almost ready.
After 15 days of wait when the fruits soaked and 3 hours of baking and another 5 hours of cooling my traditional fruit cake loaf is ready. Don't go by the size. It's a hefty 2.2 kgs cake.... Now time to feed and and wait another week to take a bite.....
