During our visit to the far north of Vesterålen, nestled among the Arctic Circle’s majestic fjords, we discovered Kvitnes Gård. This farm-to-table restaurant has become one of Norway’s most celebrated dining destinations, thanks to the vision of Halvar Ellingsen. Known for his time at Oslo’s Michelin-starred restaurants Bagatelle and Ylajali, and as Norway’s youngest top chef, Ellingsen has brought a unique culinary experience to his ancestral family farm. Established in 1855 by his great-great-great-grandfather, Christoffer G. Ellingsen, Halvar’s return in 2015 marked the beginning of a new chapter for the farm. A fissure eruption started on the Reykjanes Peninsula on Monday, December 18th at 10:17 PM.
Even with the ongoing volcanic eruption, Keflavík International Airport continues to function normally, with no disruption to its flight schedule. The effects of the eruption are contained, ensuring no threat to safety and no impact on infrastructure.
The newly formed fissure, stretching 4 kilometers (2.5 miles) long, emerged roughly 3.5 kilometers (2 miles) to the north of Grindavik. The lava output is substantial, ranging from 100,000 to 200,000 cubic meters per second, marking a tenfold increase compared to the lava volumes from the previous three eruptions at Fagradalsfjall in recent years.

Iceland has opened its borders to ALL vaccinated travelers, making the north Atlantic island one of the first countries in the world to reopen to tourists after coronavirus.

Iceland is coming back from this pandemic stronger than ever. The number of cases has remained consistently low due to the strict quarantine and testing measures issued by the government. 14.7% of the population have been vaccinated by now, and the government expects the majority of the country to receive vaccinations by the end of summer if everything stays on track.

Restrictions are slowly becoming more relaxed among the public the fewer new cases arise, and daily life has nearly resumed to business as usual.
