News about Podere San Gregorio has been available since the 18th century; in fact, it appears in a manuscript of the Bishop's Curia of Montepulciano that it was owned by a convent of Sisters of Chiusi. Since the 1950s the San Gregorio winery has made viticulture its vocation, and since 1987 the Commercialization and development of the company brand began. The philosophy is based on the enhancement

of Tuscan culture, cultivating only grape varieties that have evolved and adapted over time in these places. To confirm this rootedness in the territory, since the 2000s the breeding of Cinta Senese in the wild began. One building was converted into a winery, preserving of the original structure only the perimeter walls and the beautiful arches of the room that was used as a stable at the time. The other building, on the other hand, preserves the original structure intact: an unusual structure in the Tuscan countryside. It is a very regular and modular building, quite different from the typical farmhouse, and perhaps used as accommodation for seasonal workers (while the farmhouse housed the sharecropper family). The cultivation of vines destined to produce a Chianti like ours is subject to strict regulations designed to protect the quality characteristics of the product. In the vineyards of San Gregorio, every single vine receives the careful care proper only to the old peasant techniques: pruning, tying, hoeing, cleaning are manual; and the harvester discards, the bunches that for some reason do not appear perfect.

✨ Vin Santo: a tradition that captures the essence of Tuscany.

In the making of this prized sweet wine, the grapes undergo an ancient and fascinating process: drying.

After harvest, the carefully selected grape bunches are laid on mats or hung in well-ventilated rooms, where they rest for several months.

During this time, the grapes lose part of their water content, concentrating sugars, aromas, and intense flavors.

Only after this long drying period are the grapes pressed to produce a rich, sweet must, which will age for years in small wooden barrels, giving Vin Santo its distinctive notes of honey, dried fruit, and spices.

Our Story

Notizie sul Podere San Gregorio si hanno fin dal Settecento, figura infatti in un manoscritto della Curia Vescovile di Montepulciano che era di proprietà di un convento di Suore di Chiusi. A partire dagli anni Cinquanta l’Azienda San Gregorio ha fatto della viticoltura la propria vocazione e dal 1987 è iniziata la Commercializzazione e lo sviluppo del marchio aziendale. La filosofia è fondata sulla valorizzazione della cultura Toscana, coltivando solo vitigni che in questi luoghi si sono evoluti ed adattati nel tempo. Per confermare questa radicazione nel territorio, dagli anni Duemila è iniziato l’allevamento della Cinta Senese allo stato brado. Una costruzione fu trasformata in cantina, conserva della struttura originaria solo i muri perimetrali e i begli archi del locale che all'epoca era adibito a stalla. L’altra costruzione conserva invece integra la struttura originale: struttura inusuale nella campagna toscana. Si tratta di una costruzione molto regolare e modulare, assai diversa dal tipico podere, e forse adibita ad alloggio per lavoratori stagionali (mentre il podere ospitava la famiglia mezzadrile). La coltivazione delle viti destinate a produrre un Chianti come il nostro è soggetta a norme severe, volte a tutelare le caratteristiche di qualità del prodotto. Nelle vigne di San Gregorio, ogni singola vite riceve le attente cure proprie soltanto delle vecchie tecniche contadine: potatura, legatura, zappatura, pulitura sono manuali; e il vendemmiatore scarta, i grappoli che per qualche ragione non appaiono perfetti.
