Aceto Balsamico Tradizionale = 👇🏻

🍇 Grape (the only raw ingredient is grape, nothing but grape!)

🟪 Boiled must ( the boiling of the must takes place in particular environments - the acetaie - and determines the slow start of the double alcoholic and acetic fermentation in large open vessels, called "abbesses." )

⌛Time ( evopation of the water part, oxidation, decanting and reinforcement, this is how after years and generations we arrive at the highest expressions of this magnificent elixir)

Tortelli, one of our favourite dish in Emilia Romagna

And if we did a professional Taste analysis, what would you say?🤔

The tastes that can significantly characterize Parmigiano Reggiano are several:

👉🏼 sweet, usually more pronounced in slightly seasoned cheese;
👉🏼 salty, which increases with aging;
👉🏼 bitter, almost always weak note, often linked to a herbaceous sensation.
👉🏼 spicy, which is expected to increase with the maturation of the cheese, but which should not be excessive..
