25 October is World Pasta Day, so let's explore a little of the culinary magic of Spello and Umbria.
You'll find strangozzi (or stringozzi) pasta on most local menus. Long and slightly thick, the strings are compared to shoelaces (its name even hints at it!)—but don’t let its humble roots fool you. This pasta brings an incredible bite that makes every mouthful a joyful celebration. Its texture is beautifully coarse, the ideal canvas for soaking up rich sauces or oils.
Throughout the year, Cacio e Pepe is the sauce of choice. Cacio, a type of Pecorino, melts into cheesy heaven and fresh coarsely ground black pepper (pepe) elevates this simple dish into something unforgettable.
From November onwards, try the seasonal black truffles freshly shaved at the table onto a steaming plate of strangozzi, drizzled with the freshest extra virgin olive oil.
