Bagna càuda Christmas
Bagna càuda, a Piedmontese name which can be translated as “hot sauce” in Italian, is a typical gastronomic specialty of Piedmontese cuisine, originating from Lower Piedmont.
Bagna càuda is a preparation based on desalted and deboned garlic and anchovies, cooked over a low heat in olive oil, reducing everything to a sauce. It is consumed by dipping various types of seasonal vegetables, usually divided into raw and cooked.

Cavatielli
Handmade cavatelli are a traditional pasta and traditional agri-food product from Southern Italy.🇮🇹
They are also produced in Campania and are seasoned with a red sauce and grated pecorino cheese.
They are enjoyed with a good red wine, such as Aglianico del Beneventano, an intense ruby red. The scent is a mix of vanilla, licorice and leather.
The flavor is intense, dry, with an excellent balance between tannins and softness. 🍷

They are called Paccheri (slaps), with seafood!
The origin of the name is rather curious, because it derives from the Neapolitan dialect where pacca means slap but, precisely, a slap given with an open hand, without hostile intentions.
But how good are they, accompanied with a Greco di Tufo, aromatic and with mineral notes, to enhance the flavors of the sea!
