Cooking with Chef Abram: A Slow Food Adventure with the College of Charleston & CEPA Study Abroad 🌿🇮🇹

Last week, 20 lucky students from the College of Charleston embarked on an unforgettable culinary journey through France and Piedmont, guided by the masterful Chef Abram. As part of their study abroad program focused on slow food, these aspiring chefs got hands-on experience with local flavors and traditions, creating dishes that celebrate the essence of Piedmontese cuisine.

The Menu 🍽️Gourmet Starter: Chef Abram’s reinterpretation of "Merluzzo al Verde Piemontese" – a sophisticated twist on a humble classic. They crafted a vibrant dish featuring fresh spinach, pan-fried heart of cod, crispy bacon, and a unique pistachio pesto. Historically considered a penitential food, cod has now been elevated to gourmet status, showcasing its versatility and elegance.

Main Course Challenge: The students tackled Risotto Mantecato al B***o e Parmigiano, accompanied by seasonal asparagus prepared three ways and topped with crunchy hazelnut crumbles. In Piedmont, rice is a staple, with Vercelli’s extensive rice fields nearby. The hazelnuts, another regional treasure, added a delightful texture and flavor to the dish.

Pre-Cooking Treats: Before diving into their culinary tasks, the students enjoyed Chef Abram’s exquisite Brasato al Barolo, reimagined as a gourmet sandwich with Purée alla Francese, and an out-of-this-world gazpacho made with datterini tomatoes and creamy burrata.

Sweet Farewell: To conclude the day, they savored a timeless tiramisu, a perfect end to a perfect meal. As a special gift, each student received a golden spoon, a symbol of the delicious memories they created and will continue to collect.

The students' handwritten feedback was heartwarming and filled with gratitude, a testament to the enriching experience they had.We wish these talented ladies all the best on their culinary journeys! 🥂

In the 18th century, nobility indulged in the pleasure of chocolate-filled real eggshells.

Over time, "Casa Sartorio" pioneered the transition to larger, artificial shells, marking the evolution of the chocolate egg tradition.

Soon after (1925 ca), Turin's patisseries began incorporating delightful surprises within these eggs. Usually edible sugary treats.

In a more modern twist, Ferrero, a Piedmontese company based in Alba, revolutionized the Easter experience with the creation of the beloved Kinder Surprise (1974), aiming to spread the joy of Easter to children every day.

This evolution illustrates the rich history and enduring charm of the Easter egg tradition, originating from the heart of Turin.

WHY IS TURIN🇮🇹 FAMOUS FOR 🍫? II Chapter
(Check the previous post for more).

Turin is famous for chocolate due to its historical association with the introduction of chocolate to the Italian court.

In the 17th century, the Duke of Savoy married a Spanish princess, and she brought the custom of drinking chocolate to the Italian court.

But first thing first.

In the early 16th century, when Hernán Cortés conquered the Aztec Empire, he encountered the Aztec tradition of drinking xocolātl: a bitter beverage made from roasted and ground cacao beans.

The Aztecs sweetened it with honey and flavored it with spices.

Cortés brought cacao beans back to Spain, and the taste for chocolate gradually spread among the Spanish nobility.

By the 17th century, it became a fashionable drink among the elite. Spanish royalty started marrying into other European noble families, and the custom of drinking chocolate spread to the courts of other countries, including Italy.

In the case of Turin, the marriage between Emmanuel Philibert, Duke of Savoy, and a Spanish princess in the 16th century played a crucial role in introducing chocolate to the region.

The Spanish princess brought with her the tradition of drinking chocolate, and it became a beloved indulgence in the Italian court.

Over time, this influence contributed to Turin's association with exquisite chocolate craftsmanship and its eventual reputation as a center for chocolate in Italy.

EDUCATIONAL SCHOOL TRIP: ADAM SCOTT LION RUGBY PLAYERS FROM ONTARIO.

January, 3rd we hosted 35 Lionesses from Canada, who joined a custom chocolate experience with us.

Embracing the spirit of camaraderie and the pursuit of excellence that defines rugby, I (Cecilia's writing) infused the experience with meaningful metaphors and motivational storytelling.

Connecting the sweet indulgence with their mission to give their best on the playground, I aimed to inspire them on a deeper level.

Our journey was not just about tasting chocolates but weaving a narrative around each flavor.
