Syrian ice cream
Jordan, especially Amman, is a shelter for a rich and vivid melting pot from all over the Middle East. You can even taste the legendary Bekdash, the "Syrian Ice cream". One of the of the clues to find it is following the mesmerizing rhythm...
Indeed, part of the experience is to watch this creamy treat being made. Wooden mallets pound the ice cream into a drum, making a rhythmic percussion song. Then stretched and pulled, thanks to the addition of sahlab, a flour made from orchid roots, and mastic, a tree resin that makes Arabic gum, giving it its particular consistency. Your amazing dessert will be scooped up and topped with a generous portion of pistachios! Have you ever tried it? How hard was it to not get up and dance?
