Since harvesting time is coming, this morning we can see the color contrast between two different tea cultivars in our tea farms.

Slide 2: Okumidori
In Japanese, the word Okumidori translated to“late green”. It’s named Okumidori because this cultivar’s baby leaves will take a week longer than Yabukita cultivar to sprout. That’s why you see the color of the tea on the left side tends to look like deep green.

Slide 3: Yabukita
Yabukita is the type of green tea cultivar that you will find in the majority of tea farms in Japan. It’s favored during to its ability to survive in any location. The bright color shows that the baby tea leaves have grown.

Let us introduce Mr. Saeki. He is the local artist who preserve the traditional anagama firing (anagama pottery). We’re so delighted when he invited us to see him baking matcha bowls. It was remarkable experience coz it was only conducted once a year!

In the firing process, he only uses pine woods to make beautiful white color from the ash of the pine woods. He keep firing for 10 days all day, and he has to put firewoods through the night or morning every 5 minutes. It is a hard work!

佐伯さんは伝統的な穴窯で陶器を焼成する陶器作家です。ちょうど今、穴窯焼成の真っ最中だということで、2日前に窯にお邪魔しました。佐伯さんは高価な松の木だけを使って焼成を行います。それも10日間という長い時間をかけて

！昼夜を問わず、薪をくべ続けるその背中に畏敬の念を覚えます。窯の中は1200度を超える高温ですので、薪をくべる作業はかなりの重労働です。窯の美しい炎はなぜか人の心を捉えます。とても貴重な体験でした。良い作品が出来ますように！

今年もお茶の苗木をみんなで植えました！今年の品種はてんみょうです。毎年お客様の協力を得て、茶の苗木を植えることが出来ています。

1000本以上のかわいい苗木をひとつずつ丁寧に植えました。てんみょうは京都品種。茶の樹が成長して収穫が期待できるようになるまで3～5年かかります。

懸念点は、鹿に食べられてしまわないかどうかということ💦最近は鹿による茶の樹の食害がひどいですので。
無事に成長して美味しい玉露や抹茶になってくれますように！

Last week, We planted baby tea trees with“Tenmyo” cultivar. Every year, we plant tea trees with the supports from our “Adopt a tea tree” customers.

Our staffs including interns planted more than 1000 tea trees this year. Tenmyo is the special cultivar from Kyoto that produce tasty matcha or gyokuro. We hope deers won’t eat baby trees hehe

It will take us 3 to 5 years to harvest the tea. We will take care of our little babies with love so it will taste wonderful when it’s served to the table 😊
