🌱 Simple Solutions, Delicious Results! 🌱

When life throws challenges, creativity in the kitchen saves the day. Fresh water was unavailable again, and as someone who avoids using river water for cooking due to potential contamination risks, I needed an alternative. So, I turned to my trusty oven for this vibrant and nutritious dinner!

✨ Oven-Roasted Veggies ✨
I tossed a medley of fresh onions, okra, potatoes, carrots, green beans, and bottle squash with rosemary, thyme, oregano, and a dash of olive oil. Roasting brought out the natural sweetness of the veggies, making them absolutely irresistible.

On the side, I whipped up a rich and creamy peanut sauce for dipping—a perfect pairing!

Nutritious Plant-Based Breakfasts for a Healthy Lifestyle🍎🍞

In Kenya, many people rely on soft, processed bread, but I prefer to bake my own whole grain bread. The bread you see here is baked from scratch, full of fiber and nutrients. That morning, I also baked breakfast muffins made with oats, yogurt, whole grain flour, and bananas. They’re wholesome, filling, and a favorite among our farmhands.

Breakfast on our farm usually includes sweet potatoes, whole grain bread with peanut butter, and a carrot-apple salad. We believe in sharing nutritious meals with our team because, here in rural Kenya, food security is a serious issue. Most families eat what they can grow, and in semi-arid areas, this often limits variety and nutrition.

We feel truly blessed to have access to a variety of nutritious, plant-based whole foods. This lifestyle not only supports our health but also teaches us to appreciate what we have.

A plant-based, whole food diet is not just about eating – it’s a path to a healthier, more sustainable life. 🌱

✅ Two 10,000-liter rainwater tanks on concrete platforms
✅ Upgraded gutters for efficient collection
✅ First-flush diverters for cleaner water
✅ A lined water pan to store overflow for dry seasons
✅ Replacing broken mabati roofing and adding new surfaces to maximize collection

This system will not only sustain our farm and rescued animals but also allow us to share water with neighbors in need. Together, we’ll create a model for sustainable farming in semi-arid regions.

🌿Plant-Based Breakfast Inspiration: Apfel-Möhren-Rohkost 🇩🇪

This breakfast 🍽️ holds a special place in my heart. Apfel-Möhren-Rohkost is a very traditional German dish that I’ve known since childhood. Later in life, during my time at college for health and nutrition, I learned so much more about its incredible health benefits from an amazing teacher who deeply inspired me. 💚

She was the former kitchen manager at the Swiss clinic Bircher-Benner, which is famous worldwide for introducing Granola (Müsli) as a healthy staple. 🥣 Her passion for plant-based eating in the 1980s truly shaped the way I approach food today. I’m forever grateful for the opportunity to have learned from her about the power of simple, wholesome, plant-based foods. 🌱

Here’s what’s in my Apfel-Möhren-Rohkost:

Grated carrot and apple for a naturally sweet base. 🥕🍎

A touch of ginger for that fresh kick.

Topped with dates and cashew nuts for added sweetness and crunch. 🌰

A dressing made with lemon juice, apple cider vinegar, honey, salt, ground papaya seeds, and a drizzle of olive oil to enhance nutrient absorption. 🍋

Adding olive oil is essential, as it helps your body absorb the fat-soluble vitamins from the carrots. 🥗 The dried and ground papaya seeds not only add a unique peppery flavor but also offer digestive benefits. 🌟

I love pairing it with steamed sweet potatoes 🍠 for a wholesome and filling breakfast. This is more than a meal – it’s a connection to my roots and a tribute to the lessons in health I’ve carried with me all these years. 🙏

Here’s what’s on the plate:

Matoke and Carrot Mash: A comforting and energizing mix rich in complex carbs, fiber, vitamin A, and potassium. Spiced with ginger and cayenne for a metabolism boost.

Rice/Oat Burgers: A tasty source of plant-based protein and fiber to keep you full.

Mchicha (Amaranth Greens): Grown organically in my garden, it’s packed with iron, calcium, and vitamin C for strong bones and immunity.

Fresh Garden Salad: Featuring basil, arugula, and cucumber from my organic garden, with a tangy mustard dressing for a burst of flavor and healthy fats.
