Fez was founded in the 9th century as the capital of the Idrisid dynasty. By the 12th or 13th century, Fez had already grown to its present size. The Medina of Fez is still one of the largest metropolises in the Islamic world, with 1000 years worth of religious, civil, and military monuments for visitors to discover in the unpaved urban center. Intrepid visitors can wander off into the labyrinth of alleys to discover market stalls, local artisans, ornate fountains, and local hammams on their own, or hire a guide. Regardless, by sure to track down Fez’ famed Chaouwara Tanneries (follow your nose), which still makes leather using medieval techniques. At the heart of the medina, you’ll find the University of Al-Karaouine, the world’s oldest university - though non-Muslims can only admire it and its giant mosque from outside. You can however, visit the historic Medersa Bou Inania college to marvel at the stunning stucco work, intricate wood carvings, and mesmerizing mosaics.
