How about surprising your family with a delicious Moroccan dip that will perfectly complement any meal. Very healthy combination of vegetables and spices. The best part it's very easy to make, quick and with ingredients that most likely you already have at home.

This dip is called zaaluk, and there are different variations, it all depends on the veggies available, the preferences of the family and the area where you are.

The base is: tomato and roasted pepper., to this you can add eggplant (like in the video) or you can substitute the eggplant for zucchini or even cooked carrots.

As for spices, you will need paprika, cumin, salt and some spicy pepper powder if you like.

Finally, some parsley and that's all. You are ready to go.

This dip is very popular in every day Moroccan cuisine. Usually the pepper is roasted directly on the fire and once is all black outside, its left for 5 to 10 minutes in a plastic bag. After this time, gently pass a knife over the pepper and the black skin will come off leaving the cooked flesh ready to be chopped and added to the mixture.

Putting the pepper on the fire, gives a nice smoky flavor to the dip, which is very tasty.

A piece of bread, or chips, even tortillas can be a variation for those who dont have access to Moroccan bread and voila! A nice little piece of Morocco to enjoy with the family.

Today we are visiting the granaries of Igudar, located in the surroundings of Agadir.

Here is a bit of history about these incredible places. The Berber granaries were banks, used by the Amazigh communities in Morocco, and are consider the world's oldest form of Banking.

Amazigh or Berber are the original inhabitants of North west Africa. Every berber tribe had it's own "bank" or granary, and each family had it's own "safe" inside the granary, which is a room with a door and a lock. The granaries were made of a mixture of mud and stone. These rooms were used to store valuables precious items, documents, sometimes grain, or anything that the owner would consider worth storing.

Also, during times of war, or calamities they served as shelter for the owners of the "safe" and their livestock, if needed.

Each granary had a guardian, elected by the same Berber tribe, who lived in the same granary with his family, but other members of the tribe would also volunteer to guard the place, so the premises would be guarded day and night.

In the area of Agadir, are condensed most of the granaries and all are worth visiting.

Moroccan Government Releases List of Cities Hosting Quarantine Hotels

The list consists of 17 cities which will hold the government-approved hotels for travelers to quarantine in.

With Morocco having officially opened its borders, the government has begun releasing detailed information on various travel restrictions, including a list of cities where travelers will be able to quarantine.

Moroccan authorities have made two lists for people traveling to Morocco: List A, which includes the countries in which the epidemiological situation is stable, and list B for countries “which are experiencing a spread of variants or the absence of precise statistics on the epidemiological situation.”

While travelers coming from list A countries will enjoy a relatively unhindered trip, requiring only a PRC test or proof of vaccination, travelers from list B countries will be required to present a PRC test and to quarantine in a government-approved hotel.

Morocco’s Delegate Minister for Foreign Affairs in charge of Moroccans living abroad, Nezha El Ouafi, released on June 15 a list of 17 cities with government-approved quarantine facilities.

The list includes Agadir, Al Hoceima, Asilah, Ait Melloul, Casablanca, Dakhla, Essaouira, Fez, Inezgane, Laayoune, Marrakech, Nador, Ouarzazate, Oujda, Rabat, Tangier and Tetouan.

The list of hotels participating in the initiative is yet to be published. Until now, there have been six General Directorate of Civil Aviation (DGAC) approved establishments in Casablanca where Moroccan returning home could stay. The list of approved hotels so far consists of two Onomo hotels, two Ibis establishments, Atlas Sky, and Delta Atlas hotel.

The Moroccan government has launched several initiatives to reduce customer-facing costs as part of Operation Marhaba, such as slashing ticket prices for Royal Air Maroc flights. Still, people coming from list B countries, whether they are Moroccans living abroad (MREs) or foreign tourists, will have to pay the cost of the quarantine themselves.

Morocco’s flag carrier Royal Air Maroc announced today that it recorded 120,000 flight reservations in less than 24 hours due to the special prices the company adopted to facilitate Moroccan summer plans for Moroccans residing abroad (MREs).

CEO of Royal Air Maroc Abdellhamid Addou announced the news in a press conference that followed the company’s decision to announce affordable prices for Morocco’s diaspora.

The company introduced unprecedented prices following high instruction from King Mohammed VI, calling on all transportation companies to set affordable tickets to help diaspora return home for the summer holiday.

On Sunday, the company described the new list of prices as “historical,” emphasizing that it is in line with the high instruction from the monarch.

The list of prices shows that Royal Air Maroc offers a ticket flight to Morocco from Europe, excluding Russia and Turkey, for a price of Є97 per passenger for a family of four or more.

The Moroccan Film Center (CCM) announced that the fifth Indiana Jones installment will be filmed in Morocco this summer. Indiana Jones is now added to the long list of major feature films shot in the country, alongside James Bond, Mission: Impossible, Inception and American Sniper. Many popular series were also filmed in the country, such as Game of Thrones, Homeland, and The Spy.

The CCM statement also confirmed that Harrison Ford is returning as the emblematic title character. He will be joined by Phoebe Waller-Bridge (Fleabag), Boyd Holbrook (Logan), Shauente Renée Wilson (The Resident) and Thomas Kretschmann (Avengers: The Ultron era), noted the statement.

Filming for the latest opus in the iconic saga began in London on June 7 and will continue in Fez and Oujda this summer.

The CCM statement noted, "The success of Morocco and its attractiveness as that large filming space are due, on the one hand, to the multiple decorations offered by our country, in its exceptional light, the experience and the qualification of its technical teams, and, on the other hand, the measures taken Since 2017 by the Moroccan cinematic center as well as the benefits granted to foreign producers.”

US’ CDC Put Morocco in Low-Risk List

Data shows Morocco’s full map in yellow, which advises travelers to be fully vaccinated before traveling to the North African country.

“Travelers should follow recommendations or requirements in Morocco, including wearing a mask and staying 6 feet apart from others,” the CDC said.

The CDC listed other countries in North Africa either in grey, amber, or red, depending on the severity of the epidemiological situation.

The very high-risk countries include Argentina, Bahrain, Bangladesh, Belgium, Brazil, Chile, Colombia, Mali, and Saudi Arabia.

The low-risk destinations include China, Cote d’Ivoire, Dominica, Ghana, Greenland, Iceland, Israel, New Zealand, and many others.

Morocco’s health officials recently acknowledged that the epidemiological situation is improving.

Public spaces have reopened, including beaches, public swimming pools, museums, cultural centers, movie theaters, and other large public gatherings.

Many Moroccans have awaited the decision as Morocco’s wedding season falls in the summer months.

In Morocco, 6,687,738 people are currently fully vaccinated.

Morocco also vaccinated 9,354,932 people with the first dose of the vaccine.

Get your bags ready!!!! We are back!

The foreign ministry has announced that all airports and ports will reopen for all international passengers from June 15.

All travelers will be required to present a COVID-19 vaccine certificate or a negative PCR test.

Travelers entering Morocco from the following countries are required to present a negative COVID-19 test taken no earlier than 48 hours at the moment of arrival, AND must have a period of quarantine of 10 days at the hotels approved by the Moroccan authorities:

Afghanistan, Algeria, Angola, Argentina, Bahrain, Bangladesh, Benin, Bolivia, Botswana, Brazil, Cambodia, Cameroon, Cabo Verde, Central African Republic, Chile, Colombia, Congo, Cuba, United Arab Emirates, Eswatini, Guatemala, Haiti, Honduras, India, Indonesia, Iran, Irak, Jamaica, Kazakhstan, Kenya, Kuwait, Lesotho, Latvia, Liberia, Lithuania, Madagascar, Malaysia, Malawi, Maldives, Mali, Maurice, Mexico, Namibia, Nepal, Nicaragua, Niger, North Korea, Uganda, Pakistan, Panama, Paraguay, Peru, Qatar, Seychelles, Sierra Leone, Somalia, Sudan, South Africa, Sri Lanka, South Sudan, Syria, Tanzania, Chad, Thailand, Togo, Ukraine, Uruguay, Venezuela, Vietnam, Yemen, Zambia and Zimbabwe.

Negative PCR is mandatory for passengers from all the countries NOT include in the previous list, even if they have a vaccine certificate.

Vaccine certificates are considered valide by the Moroccan authorities after 4 weeks, of the administration of the last dose of the vaccine.

Restrictions through Morocco have been eased, allowing cinemas, cultural centers, libraries and theaters to reopen, while the COVID-19 vaccination campaign continues.

So far, Morocco has administered about 5 million doses against COVID-19.
