Meet "Carne en su jugo," a traditional dish from Guadalajara. It is believed to have originated in Piedra Amarilla, in the municipality of Acatic in the state of Jalisco, by the de la Torre family.

It consists of a stew of minced beef roasted in its own juice, beans from the pot, and pieces of previously browned bacon; it is accompanied with chopped onion and cilantro. It is usually served in a clay dish and is often accompanied by corn tortillas, tortilla chips, refried beans, stewed onions, lemon, radishes, guacamole, and spicy tomato salsa.

The Santa Tere neighborhood, concentrates the most popular places like Karne Garibaldi and Kamilos 333, although it is possible to find this dish in any area of the Guadalajara city.

Meet "Torta Ahogada," a traditional and historic dish from Guadalajara. This dish consists of a savory birote spread with refried beans, stuffed with pork carnitas, and tossed in a tomato, chili, and spice sauce. It is often accompanied by onions stewed in lemon.

Its history dates back to the 19th century, when Camille Pirotte, a Belgian who served as a baker in one of the French battalions that arrived in Guadalajara in 1864, began teaching the bakery trade following the instructions of his supervisors. Lacking yeast, he began testing the dough to achieve a different type of fermentation. This invention became popular thanks to his gifts for loaves that were unsold after 48 hours.

Although there are several stories about the invention of the torta ahogada, its creation is usually attributed to "Güero" Don Luis de la Torre, who began selling this dish in the Jardín de San Francisco and in downtown Guadalajara more than 100 years ago.

Sharing local food with two travelers who are friends and coworkers in the USA 🇺🇲 They tried the "torta ahogada" (pork sandwich) and jericalla (a local flan). These are iconic dishes from Guadalajara 🇲🇽

It's incredible when you hear stories like theirs. They told me they were in Guadalajara only to train their replacements, as the company had just laid them off due to the staff moving to Mexico.

The most interesting thing was knowing they were enchanted by the history, culture and food and accepted that if it weren't for the layoff, they would never have experienced Guadalajara.

Jalisco Trip surge en Guadalajara, Jalisco, México en 2018 gracias a un grupo de personas apasionadas por dar a conocer la cultura, el arte y la gastronomía de Jalisco. Sus fundadores son Fernando Ayala y David Arce. El primero es un sociólogo especializado en la historia de Jalisco y bebidas regionales. El segundo es un guía local certificado con más de 8 años de experiencia en turismo y emprendedor en la gastronomía de Guadalajara. Los dos trabajaron en el sector turístico durante varios años antes de reunir un equipo de trabajo y fundar Jalisco Trip. Después de trabajar con visitantes de todo el mundo, principalmente de los Estados Unidos, se dieron cuenta de la falta de servicios turísticos bilingües de alta calidad. Así es como decidieron comenzar con una agencia que ofrece tours, degustaciones profesionales, transporte y eventos privados, que pueden ser de uno o varios días con un servicio personalizado y un itinerario a medida, centrado en los deseos del visitante.

Nuestro objetivo principal es proporcionar al viajero una experiencia única, educativa y gastronómica durante su visita al hermoso estado de Jalisco. Con los años, nos hemos centrado en diseñar las rutas más atractivas en términos de riqueza cultural, histórica, arquitectónica, artística y gastronómica de la región. Por supuesto, siempre contrastando nuestra visión con los intereses del visitante. Es por eso que todos nuestros servicios son personalizables de acuerdo con los deseos del cliente. Creemos que no solo hay una ruta correcta sino varias posibilidades, estamos abiertos al diálogo y retroalimentación con nuestros clientes.
