This institution, founded by the great Yuri de Gortari and Edmundo Escamilla, is the only school dedicated to the promotion, research, and development of Mexican haute cuisine. Today, the legacy of the founders is continued by Edgar Salgado and the entire ESGAMEX team, who continue to promote the knowledge and preservation of our cuisine. Edgar Salgado, gastronomic researcher and current director of the school, will also be our host for La Noche de las Ánimas.
