The Jimador, the artisan who harvests the Agave plant from the Agave fields has the knowledge that allows him to recognize when the Agave plant is ready to harvest since each plant grows and matures at a different rate. He uses a special tool called Coa, which is a long wooden handle with a sharp circle cutting blade at the bottom. The Jimador thrusts the Coa with an exact precision to cut the leaves (Pencas) off of the Agave and reveal the core, which is called the "piña" since it looks like a large pineapple and can weigh as much as 150 pounds.

The destilation of Mezcal
There are several theories that seek to explain how the Mezcal was first destiled, one of them says that with the Spaniards arrival, the first destilation took place but others say that Mesoamericans already knew about this process.
However, there's a 3rd theory that says it was the Filipino sailors that arrived in 1570 and established coconut plantations on the west coast of Mexico, they use destilation to get "Lambanog", a coconut nectar, and share that knowledge with us.
