Calabaza de pipian! This type of pumpkin or calabaza in Spanish, produces the very well appreciated pumpkin seeds, pepitas de calabaza! Native to Mexico, all squashes and pumpkins have been crucial on the Mexican diet. From moles, to sweets and drinks, these veggies are basic on Mexican gastronomy, a big part of our culinary history and identity.

This term refers to a Mexican cooking method consinting into burn on direct fire, essentially some vegetables or spices and also some protein that has been wrapped in some vegetable material such as corn husk or babana leaves. Since Pre Hispanic times this cooking process has been used to enhance the flavor of Mexican food and now we can find it on the supermarket! Faaaantastic!
