Have you tried tacos de chorizo verde? This vibrant green chorizo is a true gem from central Mexico! Its bold color + fresh flavor come from a blend of herbs like cilantro, parsley, and epazote, plus a kick from green chilies. 🌶️

Sautéed to perfection + served on warm tortillas, these tacos are typically topped with onion, cilantro, + your choice of salsa—green tomatillo, smoky red, or fire breathing habanero all hit the spot! Add a squeeze of lime or some creamy avocado for extra za za zoom! 🍋🥑

🌟 Fun Fact: Toluca, known as the capital of chorizo, is famous for this herbal twist on classic sausage—but these tacos are a must-try across Mexico! 💥

Check out the taco in this photo—its extra special, topped with fresh French fries for an irresistible crunch! Tacos + french fries?!? Can you imagine ANYTHING better???🍟✨

💧 Long before Querétaro became the bustling city we know today, the Río Querétaro was the heartbeat of the region. For the indigenous Otomí people, it wasn’t just water—it was life itself. 💚

They relied on it for their crops, rituals, + daily survival. When the Spanish arrived in the 16th century, they saw the river’s potential too. Its waters powered mills, irrigated farmlands, + shaped the very layout of the city. 🌉

But it wasn’t always smooth sailing (or flowing). Seasonal floods often caused chaos, leading to the construction of canals + structures to tame its waters. 🌊

Over time, the river adapted to the growing city, or maybe it’s the other way around. Today, it quietly weaves through Centro, a reminder of the lives + stories it sustained for centuries. 🌾

Next time you explore Querétaro, take a moment to seek out this hidden gem, listen to its gentle flow, + let it transport you back in time. 💭

🌞 *Rise + shine, Querétaro adventurers!* Let’s talk about *chilaquiles* (chee-lah-kee-lehs) —the ultimate Mexican breakfast that’s practically a hug in every bite! 🫓✨

Think crispy tortilla chips tossed in either red or green salsa (team rojo or verde, anyone?), topped with crema, queso fresco, + a sprinkling of onions. Add a sunny-side-up egg, shredded chicken, a little chorizo, or some carne asada, + you’re in food heaven. 🍳❤️

Did you know? The word + dish date back to the ancient náhuatl language. Chi-l(-li) – réfering to ‘chile’ the main ingredient 🌶️, +
Aqui-lli – coming from the verb aquia that means ‘submerge in’. And trust us, it’s the perfect dish to start your day, cure a late-night indulgence, or just dive into the flavors of Mexico. 😋

Here’s a fun twist: Mexican urban legend says chilaquiles are the go-to cure for a rough morning after! 🍹✨ At weddings that last into the early hours, they’re often the final bite served to keep the party going strong (or at least help everyone make it home). 💃🕺

So, next time you see chilaquiles on a menu, don’t hesitate—your taste buds will thank you! What’s your favorite salsa to drench them in? Let us know below!👇

📣All-aboard for a little history lesson!

Did you know Querétaro’s antique train station once connected the city to Mexico City + beyond? 🚂 Built in the 1800s, *Estación de Ferrocarril Querétaro* served as a bustling hub for goods, travelers, + daily life, all set against the elegant backdrop of Neoclassical + industrial architecture. With its high ceilings, arched windows, + detailed brickwork, the station’s design combined style with the functionality needed for its time. 📍

Although it stopped functioning as a train station in the 1990s, this beautiful building now lives on as a cultural hotspot, preserving the charm of Querétaro’s golden rail era. Stop by to soak up the nostalgia of a time when trains were the lifeblood of Mexico’s cities! 🛤✨

Let’s talk Vitamin - T, Mexico’s most important vitamin! For today’s dose of vitamin-t we’re exploring tejuino. 🥤

Did you know that tejuino, a refreshing fermented drink from Jalisco, has roots that reach back to Mexico’s pre-Hispanic times? Originally crafted by the Huichol people, this drink wasn’t just a thirst-quencher—it held cultural + spiritual significance, symbolizing their sacred connection to the land + ancestors. 💕

Tejuino is made from fermented masa (corn dough) + piloncillo (unrefined cane sugar), giving it a tangy, earthy flavor with just the right touch of natural sweetness and salt. Have you ever wondered how it’s made? Masa + piloncillo are mixed with water + allowed to ferment just enough to develop that distinctive, mild tang. Some makers even add pineapple and/or lime juice for an extra pop of that sweet + sour magic! 🍍

Served chilled, often with a sprinkle of salt, shaved ice, or a dash of chili powder, tejuino is especially refreshing on hot days. And did you know some people add a splash of beer to give it an extra kick? Despite its mild fermentation, it’s considered non-alcoholic + is a nostalgic favorite sold by street vendors all across Jalisco.

With each sip, tejuino brings a taste of Huichol tradition + the vibrant culture of Jalisco to the meal. Have you tried it yet? If not, this one-of-a-kind drink offers a delicious way to experience the legacy of Mexico’s indigenous heritage firsthand! You can find this delicious version at Mercado La Cruz. We’ll see you there! 🎉

💧 Discover Querétaro’s Cajas de Agua: Fountain Boxes! 💧

Did you know Querétaro’s streets are sprinkled with charming fountain boxes that tell the story of its colonial past? One gem you can’t miss is the Fuente de Santo Domingo! Located at the corner of Pino Suárez and Ocampo, this little water box once served the Dominican friars living at the nearby convent. (It also happens to be on one of the prettiest bougainvillea lined streets in centro.). 🚶‍♂️⛲🌺

Back in the day, locals would fill their buckets with fresh mountain water from this exact spot—so it’s not just a pretty face! Now, it’s a hidden piece of history blending into Querétaro’s streets, a quiet reminder of the city’s clever water system. 💦

Next time you explore the city, keep an eye out for these historical treasures and snap a pic of the past! 📸✨

🌺 Agua de Jamaica - Such a Beautiful thing! 🌺

Meet one of Mexico’s most refreshing drinks! Made from dried hibiscus flowers (flor de Jamaica - sounds like “ha-my-eh-kuh”), this gorgeous ruby red beverage has a tart, cranberry-like flavor balanced with a touch of sweetness. 🍒✨ It’s perfect for cooling off on a hot day, served cold over ice + sometimes with a squeeze of lime for extra zest. 🍋 (In our house we like ours with fresh ginger + often drink it hot as a tea.) 🫖

Beyond its vibrant taste, it’s also packed with antioxidants, known to help lower blood pressure + aid digestion (to name just a few of its bonuses) — so it’s delicious + good for you too! 💪🌿 It’s also part of the wider tradition of aguas frescas - refreshing fruit or flower-based drinks making it a staple in Mexican homes, markets, + family gatherings. It’s a splash of tradition that can be added to any meal. 🌸 🥘

Have you tasted this jewel of Mexican drinks yet? 💎 Let us know what you think in the comments! 🌞
